A Boost of Confidence

All day today, I have been totally rockin’ the Operation Beautiful mindset. I looked in the mirror this morning and thought, “You’re beautiful.” As someone who routinely struggles with self-esteem, I was delighted by  this sudden boost of confidence. Not gonna lie, there might have been some dancing in my skivvies that happened as a result:)

Yes, I have two parfait glasses—one at school and one at home. I can’t go extended periods of time without my parfaits, people.

 

Sweet potato nachos!

As if I hadn’t had enough beta carotene today, I decided to whip up another batch of pumpkin hummus for dinner. Yes, I could have a Monday with hummus—it is humMonday, after all.
