A Christmas Baby Never Forgets
September 16th is an important day to me—it’s not my birthday, nor is it an anniversary. Rather this day represents the much anticipated 100-day mark until Christmas.
Earlier today, my Twitter friends asked me whether this marker had yet arrived, and I was pleased to inform them that it had. I didn’t forget—I simply chose not to post about it (as I have done for the past two years) because I had so many other exciting things to discuss (e.g., snorting chocolate, hair nets, and puppies). Indeed, I did not forget the start of the countdown—after all, a Christmas baby such as myself never forgets the impending season of holiday joy:)
Let’s get onto the grub—I’ve got a few days to mark off my countdown…
Pumpkin and cottage cheese are kind of an amazing combination…almost as tasty as pumpkin yogurt. Almost.
Lunch was a bit of a snooze-fest. I packed it in the span of 5 minutes while simultaneously drying my hair and putting my pants on. It doesn’t get much simpler than a bean salad.
Once home from a long day of class, I set to work roasting an acorn squash. I stuffed this beauty with zucchini, onion, crumbled soy meatballs, and a generous amount of oregano. Not gonna lie, this was a truly heavenly meal.

That stuffed squash looks amazing! And I LOVE pumpkin + cottage cheese… but I still haven’t found the pumpkin!
Can you post the recipe for that stuffed squash that you roasted? That sounds amazing!
