A Day Off
Today marks the beginning of fall break, a four-day weekend for which I am very grateful. I was eager for this small vacation, as I am still learning how to balance this school-work-boyfriend thing that is my life.
So how did I spend my first day off? First, I spent much of it reading this book:
Sure, it’s part of my assigned reading for gastronomy class, but I quite enjoyed perusing its pages and scribbling copious notes in the margins.
I also flounced across the street to Target, where I shopped for birthday cards (an activity I oddly enjoy), hunted for discounted peanut butter (no luck), and scoured the Halloween candy for Reese’s Pieces (to no avail). I’m on my own this evening, so I plan on finishing up the aforementioned book and watching Valentine’s Day.
What do you like to do on your days off? When I don’t have schoolwork to catch up on (as I do today), I like to read Clean Eating with a mug of hot tea.
Somewhere in the midst of that schedule I managed to eat a few things too.
Although I typically prefer eating whole fruit to drinking juice, sometimes nothing satisfies like a cup of good ol’ OJ.
For lunch, I whipped up a grilled tofu salad with various grilled accoutrements. My homemade creamy avocado dressing wasn’t nearly as drizzle-able as I had hoped; I apologize for the icky presentation.
Dinner was another occasion for the GF grill. I grilled some eggplant and put it on a flaxseed tortilla to create a makeshift pizza. The side salad featured the extra ingredients—note to self: buy Balsamic vinegar! The salad would have been fantastic with a little tart-and-sweet action.
Alright, I am off to finish a quiet day with an equally quiet evening. Good night.

Pretty funny– I have the latest issue of Clean Eating open right in front of me as I checked on your blog. Plus, lately I, too, have enjoyed a good glass of OJ even though I normally opt for the whole fruit.

I always pick up Clean Eating when I’m in the book store, but I haven’t committed to the purchase yet. Apparently, I should!

I’d love to know your recipe for wholemade avocado dressing– I’m a sucker for anything avo! And your lunch presentation does NOT look bad as mine have looked terrible.

I just have been having much needed time off as well and honestly baking and cooking is taking over. I am thinking of some cider mill time tomorrow and running!

I love to bake on my days off – I am also trying to balance working full time with two graduate classes and a husband. I took 2 days off this weekend to hopefully catch- up on school work so I have some time to spend with my husband this weekend (and make pumpkin donuts).
Caroline, you TRULY make me want to get a GF grill! Perhaps it’s my next purchase…
I loved fall break. Those little breaks always come just when you need. I love having days to just do whatever sounds good.
