A Moveable Feast
Contrary to my post’s title this evening, what follows is not a book report on that most lauded work by Ernest Hemingway. Instead, I present you with the more foodie-tastic topic of portable eats.
Using your suggestions from Friday’s post, I came up with a wide array of snacks to bring along for our long car ride tomorrow. Observe our moveable feast:
I also plan on throwing in a few sticks of string cheese and maybe an emergency box of Tofurky.
Everything is packed up and ready to go—as soon as I get out of class tomorrow, the road trip begins!
For those of you in the US, how are you spending the Thanksgiving holiday?
Despite my excitement for vacation to begin, I had to endure a rather torturous day of work and class. At least I had some tasty eats to cheer me up.
Nothing like a parfait to start the day.
I packed some Spinach Hummus for lunch…largely because of its Christmas-y colors.
By the time I returned home, I was starving—I needed something quick and filling. Curried Tofu Salad to save the day!
Before I go, I wanted to show you a card I received in the mail today. I won’t be spending Thanksgiving at home with my parents this year, so my mom sent the perfect card to let me know she’s thinking of me:

I bought some spinach hummus at Whole Foods the other day that is divine. I think it uses frozen spinach though, because it has a really strong spinach flavour that I don’t think you would get with baby spinach. So bright and green too – must make my own copy cat version

I’ll be spending Thanksgiving at my cousins with the whole family gang. I’m bringing my own vegan entrees– super excited about that! We’ll see how people prefer them to turkey and creamed spinach!

We are spending half of Thanksgiving Day with my taller half’s family and the other half with my dad’s family. I wasn’t able to get out of one of them, unfortunately. Splitting a holiday is way, way too exhausting. Have a safe trip!
I am such an overpacker for car trips, but it’s always worth it because variety is key! The card your mom send you is amazing! It would suit me quite well, too.
