A New Beginning
So this past weekend has been kind of whirlwind—in a good way.
It all began with Seth’s move. Up until now, Seth has been splitting his time between Durham (where he works and lived) and Raleigh (where I work and live). As we’ve both learned over the past three months, Raleigh is a pretty spiffy city to live in, which induced Seth to move into an apartment closer to Raleigh…and me. Yes, I know—I am a spoiled girl.
Anyway, we were up bright and early yesterday morning loading up the U-Haul with all of his belongings. Indeed, we managed to pack everything from his beloved recliner to his racquet ball equipment. Oh, and Togo, too.
As of yesterday afternoon, his new apartment was in a state of chaos. Oy. Just looking at it stresses me out.
We both had our priorities for unpacking though. Observe:
Today was spent writing a ridiculously long research paper (the one about osteoporosis).
It’s all done now though, and I can rest peacefully tonight with a sense of accomplishment and a sense of excitement as for what our future in Raleigh may hold:)
Now, Seth and I have to make an urgent trip to Target this evening, so let’s get onto the grub.
Saturday
Knowing that we had a full day ahead of us, I packed a portable breakfast on Friday evening. Good ol’ Amazing Grass—I had forgotten your powers of nourishment.
For lunch, we took a break from all that heavy lifting to dine at Blue Corn Cafe. It has always been a favorite Durham dining spot for us, so we thought we should commemorate the farewell to Durham with one last meal.
Once dinnertime rolled around, we were both pretty pooped. We popped into the Teet to get some salad bar action.
Sunday
I woke up with a craving for cheese. That doesn’t happen often, so I listened to my body and gave it some cheesy eggs.
Lunch was enjoyed in the midst of paper-writing. I might have gotten some hummus on the keyboard.
For dinner, I wanted my leftover sprouts and b-nut squash. How to make it a meal? Add soy sausage. Voila.

The brussels sprouts with onions and soy sausage looks delicious. I’ve been meaning to make brussels sprouts this fall but haven’t gotten around to it yet. I think you’ve inspired me!

That’s wonderful. And not at all spoiled. More like deserving. And what a nice GF to help him with the move. I pack the kitchen last and unpack it first so totally understand your priorities.
