A New Kind of Countdown

It’s no secret that I like countdowns. My annual Christmas countdown is the main event, but I’ve also been known to make similar preparations for spring break, summer, and other occasions for celebration. What can I say? I’m enthusiastic about holidays:)

The most recent addition to my list of countdown-worthy events, however, is unique to me—I have started a countdown until Seth comes to visit Birmingham. As I mentioned a few weeks ago, Sethless-ness is no fun. Accordingly, we have a arranged a visit for the weekend of June 25th, which is a mere 17 days away.

Today was spent doing a few of my favorite activities: shopping for dishes, chatting with Mumsy…and eating, of course.

After returning from a gloriously long morning run in the sunshine, my culinary juices were flowing, so I decided it was a pancakes kind of morning. To be more precise, I decided it was a Vegan Protein Pancake kind of morning. Using Mama Pea’s recipe and BioChem’s vegan protein, I made a trio of tasty, albeit ugly flapjacks. My flipping skills apparently need a little work…

After breakfast, I discovered a fun package waiting for me on the doorstep:

Justin’s Nut Butters! Can’t wait to give these nut butters a taste.

I didn’t get a chance to eat lunch until mid-afternoon, so I was hangry. Nonetheless, I still took the time to prepare a new recipe. The sandwich you see below was based upon Clean Eating’s Curried Egg White Salad Sandwich with Apricots. As per usual, I made several tweaks, most notably the substitution of golden raisins for apricots and the omission of cauliflower and water chestnuts. The end result was ah-may-zing. This dish will surely become a Salad Lady favorite.

Once dinner-time rolled around, I relied upon the goddess of vegan cooking (aka Dreena Burton) for inspiration. I used the Chili Cornmeal Bake recipe from The Everyday Vegan, but I’ll be honest—I cheated a little. I used Health Valley’s canned vegetarian chili, added onions, and prepared Dreena’s cornmeal mixture for the topping. I also strayed from the recipe a bit by cooking the cornmeal in almond milk instead of water for added creaminess.

    I suppose I should start my countdown for July 17th, when I go to Wyoming to visit my BFF. SO FREAKING EXCITED.

  4. Cover up the ugliness with toppings–that a girl. I used to countdown…and now I’m single–no more counting.

    I was just looking at the Justin’s hazelnut…I need to try some of that b/c I’ve had major Nutella cravings lately. Did you write them?

  5. Love the food in this post. I don’t think the pancakes look ugly, but I did have blueberry porridge this morning which turned a shade of grey though.

    From what issue of CE is the egg salad from Caroline? Looks so delicious and I am in the mood for some curried dish today!

  7. oh my gosh…I’m so jealous of your Justin’s stash! One of my favorite nut butters ever. And Justin is such a cool guy. I love the idea and how he started his company. The maple AB is our FAVORITE. Aww- so cool that the BF is visiting. I do count downs all the time. Its always great to have something to look forward to. Ow chili cornbread bake? I need to try a version of this- yum!

  8. I have a habit of doing countdowns too. Though the only thing I can think of counting down to at the moment is the start of school and there’s no way I’m doing that! :)

    I make a countdown for everything… holidays, birthdays, season changes, end of workouts… right now I’m counting down until Friday at 7 pm when I get to see one of my best friends again for the first time in a year for a surprise birthday party!

    So exciting to see Seth! I love countdowns… I am itching to book my trip to NY so I can start counting down for that :D

  11. Yay for Seth time! When I was in college, I’d always countdown until my boyfriend and I’s next meeting. Other than that, my only countdown is for vacation!

  12. seriously i have had such an obsession with curry powder as of late that it’s slightly sickening. i’ve been using curry powder and fresh lime juice in my egg salad and let me tell you it’s to die faw.

    btw josephs pitas? i love! they’re not very think and do break but they get the job done and are super soft :) i imagine they would make excellent pita chips too hahaha

    yesssssss seth time is SO CLOSE! i’m counting down the days until july 1st aka summer and freedom from school for 2 months!

  13. i seem to be constantly counting down…but i’m not even really sure what i’m counting down for! i think my ultimate countdown though, would have to be summer! the summer holidays ALWAYS come with a warm welcome from me! i love the break from school! i then spend the summer holidays counting down the days before i go back to school… i dread it so much!!
