A Summer to Remember
On this, my last night at home before my senior year of college, I am reminiscing on the past four months of relaxation. This summer will surely be one to remember: In May I ran for the orangutans, and made my video debut. June brought a new tonight show host, along with a day of berry-picking. The rest of the summer was occupied by far too much shoe shopping and punctuated by an unfortunate run-in with flying poop. Perhaps it was not an exciting summer per se but surely unique. What will you remember about the summer of 2009?

Thursday
Just a touch of vegan vanilla ice cream (~1/4 cup) adds so much creaminess to my evening shakes!

Friday
The morning meal was a bit random today. I never would have planned to combine pumpkin, peaches, and banana, but it was what I had on hand–and it worked well.

I don’t care for regular coleslaw (cabbage is on my “icky list”), but I made my own slaw for breakfast today using broccoli slaw, Annie‘s Goddess dressing, tofu, a touch of vegan mayo, and rice wine vinegar. A vast improvement over the traditional goop, if you ask me:)

Because my last dinner at home, I was given the opportunity to choose the menu for the evening. What did I choose? Whole Foods salad bar, of course! I employed my usual tactic of using half “standard” ingredients (greens, carrots, mushrooms, and hummus in this case) and half “exciting” ingredients (curried couscous salad, broccolini salad, and roasted garlic cloves). The result: a mad-delicious melange. Mountain Brook Whole Foods, I shall miss thee.

Good luck traveling back to school! I know I personally had a lot of trouble packing up all my kitchen goods – it is so intimidating! After seeing the video of your pantry at home, I don’t know how you decide what items to take to school and what to leave behind. And yay, we are both seniors this year!
That peach, banana, and pumpkin smoothie sounds awesome! I would totally make/drink that too!
Ahh, memories…flying poop. Wonderful. I don’t know if I can top that… Well I do have a silly story. I tend to keep emotions bottled up and the hysterics come out at odd and irrelevant times. Once I was downtown this summer and got to the highway and realized I was 25 cents short of being able to pay the highway toll. I couldn’t get home without that 25 cents! It was late at night and I started bawling as I realized I was stuck downtown, lost, and was driving aimlessly…I didn’t know of any ATMs and it was really dark out. And I had no gas. Eventually I persuaded a crowd of younger college boys on the side of the road to muster up a quarter for me…but I was so embarrassed and tears were gushing out the entire time. But I was able to pay the toll and finally got home!
Aw i was always sooo sad to leave the comfy summeriness of home! But it will probably be nice to see everyone, not to mention all the Fall football and basketball festivities!!! Love good sports schools

hahahaa, that was me, too. 1/3 of my luggage were kitchen goods! That was all I cared about! Ah, glad to have a fellow foodie who understands! My parents thought I was mad.

I think that what I will remember most about this summer were the ups and the downs and the big finale at the end of finally feeling like ME again!

SAdly what I’ll remember most is the cool weather that we had all summer, But I will also remember all the fun places we visited on our vacation!
I will remember my love affair with avocados. I just found out I liked them this summer, and now nothing can keep us apart

I use the same method when I go to Whole Foods salad/hot foods bar. It makes for a perfectly veggie filled, delicious meal
Actually, pumpkin, peaches, and banana, sounds like a yummy combo! Gotta try that with maybe a scoop of vegan ice cream for that creaminess. Could you believe that I’ve never made shakes with ice cream before? Madness.
I love that breakfast! Pumpkin and peanut butter is such a yummy combo on toast. And that smoothie sounds excellent as well!
I think I’ll remember this summer as the first one where I actually turned from ghostly white to…slightly less ghostly white from spending so much time outside. Asdie from a minor blip in July, the British weather has actually been quite kind…says she as rainclouds gather overhead ; )
