A Visit from the RD

As I trudged to my second class today, I was not expecting to enjoy the upcoming 75 minutes. To my utter delight, however, today’s meeting was a guest lecture from a Duke Student Health dietitian. The RD provided plenty of nutrition education materials and delivered a moderately interesting PowerPoint. I asked her the same question as I did Janel at the Healthy Living Summit: are the saturated fats in coconut oil healthier than those found in animal products? Her answer: “There’s a lot of new information about that right now.” I guess nobody knows the truth about my beloved coconut yet. Sadly, my classmate and blogging friend Allie was not there to enjoy the lecture—missed you, girl!

Anyway, my sorority’s annual “Harvest Moon” event (think hayrides and s’mores) is tonight, so I better make this post a quick one.

Friday

I made Banana Blender Cereal for breakfast, but I opted for almonds this time instead of coconut.

For lunch, I tried my hand at making acorn squash soup, and I was very pleased with the results. Acorn squash, how I love thee. That’s my standard mock tuna salad (chickpeas + vegan mayo + mustard + kelp granules) on the side.

I just finished up a delicious dinner, which was made up of Thai Peanut Soup with tofu (from Peanut Butter and Company Cookbook), served up with some fresh cantaloupe. Just as delicious as the last time :)

Alright, I must now don my plaid and cowboy hat. Have a great weekend!

  4. I never tried coconut oil. Does it have a nice taste? Oh, and yeah, do you eat snacks between your meals? I’m just wondering :)

  7. Healthier or not, just enjoy it! I’m pretty damn sure coconut oil is good for you. SE Asians eat a lot of it and they’re damn healthy! ;-)

  9. I would answer the question about coconut with this… how many people shipwrecked on desert islands have had high cholesterol? I’m gonna call Tom Hanks Right now.

    Can i shred up a nori sheet as opposed to using kelp granules. Im just out right now and finances are forcing me to curtail the loves of my life. Im gonna shoplift some Almond Butter soon… i swear.

  10. I am interested to know about the coconut oil and saturated fat as well. It’s true no one seems to know right now. We need to hire someone to do a bit of research.

  11. I love acorn squash too! Last week I roasted one acorn squash cut into cubes with cubes of 2 small apples, all seasoned with salt, pepper, olive oil and some curry powder… omg, it was the best! Even my 7 year old loved it and commented on that, saying that the squash was awesome with the apples! I got inspired my favorite acorn squash and apple soup and the roasted combo turned out really well.

  14. i love the addition of kelp granules to your mock tuna – i usually just shred in some nori but it comes out mushy.

  17. I asked my nutrition teacher the same thing about coconut oil. And he was pretty vague as well. He said studies are showing that it’s possibly digested differently, but not sure.

  18. Love your tofu dish! What’s your (or anyone else’s) take on soy?? I hear so much conflicting stuff on it…is it okay to eat every day?

  19. Oh no! I missed her! Yeah, I was crazy scared about my exam and had to play hooky (again). This is so unlike me!!! I figure having taken a semester devoted to nutrition and weight management, I will be in good hands. MISS YA!!

    In my opinion, coconut fat is healthy–a lot of studies prove it is so! Or maybe I just want to believe it is healthy ;)

  25. I think you should change the name of your blog to The Blender Hut. Haha you use the blender (if that’s what you use) for the most AMAZINGLY delicious looking things. I love love love love love it
