Ahead of Schedule

This weekend has been all about getting ahead. I had planned on devoting the entire weekend to finishing my “Bananas are fattening” paper and starting a project for my fitness class. Due to some unexplained burst of productivity, I was able to finish the paper on Friday, and perhaps due to Allie’s and my fantastic teamwork, we did the project in its entirety on Saturday afternoon. Woohoo! That left today to devote to more enjoyable activities (i.e., blogging, day-dreaming about Thanksgiving, and watching Christmas movies). What do you like to do when you unexpectedly find yourself with some spare time?

I have much to show you, because Allie and I went on another little culinary adventure this weekend:) Let’s get crackin’.

Friday

Apparently, my hard work on Friday made me a little lazy about my smoothie photography…oops.

Saturday

A few days ago, I saw Jenn eating an oatmeal banana split. With the temperatures dropping, I needed something to replace my warm-weather Banana Energy Sundaes, so I figured this would be the perfect dish to try after my chilly run yesterday morning. My version featured coconut, cocoa-roasted almonds, and a few strawberries.

Allie and I had a study date for the afternoon, so I seized the opportunity to pack my lunch. Into my lunchbox went some BBQ seitan, whole wheat bread, and a few accompaniments for a rounded and delicious meal.

After finishing our project (which happened to center around favorite activity: grocery shopping!), Allie and I set out on another culinary adventure. First, we hit up Whole Foods for some free samples (gingersnaps!), then decided to head to Butternut Squash for dinner (where I went with my parents a few weeks ago). Perhaps due to our mini nosh-fest at Whole Foods, we both opted for salads for dinner. Despite having a supremely awkward waiter, we had a great time, eating tasty food and enjoying each other’s company!

We then headed to Trader Joe’s for a few essentials and wrapped up our evening with some Starbucks action. I got my usual hot tea (Passion flavor), but I just had to take a picture of the festive cup:)

I came back to the apartment to watch The Grinch and do some online shopping with Alanna. I needed a celebratory shake too.

Sunday

I made my usual Sunday morning bowl of oat bran, this time cooking them in a combination of cinnamon spice tea, almond milk, and banana. I hope I can find some of the seasonal teas soon so that I can make Pumpkin Spice oats, or even better, Gingerbread Spice oats.

At Chapel today, they were handing out care packages to undergraduates for finals week. Always in search of a little solace amidst final papers and tests, I took one home with me. The thoughtful note attached was my favorite part:

However, none of the goodies included really appeal to me. Know Cheez-It addicts who might enjoy this care package?

After composing this afternoon’s Salad Lady post, I settled in to make a quick lunch. Seitan is friggin’ delicious.

Somehow, I have gone 21 years without ever having sampled a stuffed pepper. I sought to change that this evening by putting some leftover lentils to good use. This was a delicious meal, and I am looking forward to putting this into the regular Broccoli Hut rotation.

Alright, I think a Christmas music dance party is in order. Ciao, bloggigans.

    Love that you got a care package for finals… at my school our parents could buy them for us through the school store, but we never got any free!

    in my spare time? I never have any because i procrastinate via blogging and cooking and baking!! creating recipes ect. A slight food obession if you will! Which is why I am SOOO excited to graduate from college (ahem…5 year undergraduate here…) and go to a grad school specializing in natural health education!!!!!!!!! oh i cannot wait for my “procrastinating” time to go toward my future!

  10. I broke out the Christmas movies yesterday!! It made me think of you! Glad you had a stuffed pepper. Those things are delicious!

  11. I love stuffed peppers, but I like the red peppers for that. Try a red bell pepper stuffed with quinoa and veggies, light cheese on top… scrumptious!
    When I have free time my favorite thing to do is read blogs, read cookbooks (yes, I like reading cookbooks, as if they were novels!), organize my recipes, or if I have a good book I am reading then I like to just lay down on the couch and read. It is wonderful when everything gets done and we have the time to have fun!

  13. I love the idea of cooking oats in tea! I have never had a stuffed pepper either – I may need to try that as well.

    If I had some unexpected free time I would probably catch-up on my huge pile of magazines!

  17. Hey, I’ve gone 30 years and never had a stuffed pepper, so it’s not that weird. I blame that on the fact that I can’t really handle peppers in vast quantities – they often don’t get along with my tummy. But they always look delicious!
