An Apt Anniversary
Hello, blogland! I am delighted to return from my brief hiatus—I have much to show you. As I mentioned in last night’s post, December 1st marks the day on which Seth and I went on our first date. We honored the occasion with a gift exchange, a celebratory dinner, and a bit of television entertainment. In short, it was a celebration very befitting of Seth and Caroline.
First, the gifts. Technically, we exchanged gifts at midnight on Tuesday night. Neither of us could wait another day to partake in the ritual—yeah, we’re dorks like that. For Seth, I created a photo calendar out of pictures from the past year. (FYI Having a daily blog is very helpful for finding old photographs!) For Seth’s gifts to me, I present you with photographic evidence:
Last night, Seth showed up with two roses. As you’ll recall, he brought me one rose on our first date. He declared, “Maybe you’ll get three next year.”
Then he surprised me by taking me to the Irregardless Cafe again. Details on the meal to follow…
Afterward, we settled in for—what else?—an episode of Glee.
‘Twas a lovely evening, indeed.
Today brought an abrupt return to reality with an on-campus study session and an inventory for work. Boo. Let’s get onto the grub.
Wednesday
Technicolor egg whites for breakfast. Eat by color, my friends.
Lunch was equally colorful, featuring some rockin’ purple cauliflower and my peanut ginger dressing.
After our last visit to the Irregardless, we knew that an order of the hummus was completely necessary.
For my entree, I ordered the scandalously named “Vegan Sex,” a layered salad with sweet potato puree, quinoa tabouli, and avocado. Although I felt SUPER awkward ordering it, the dish was quite tasty.
Thursday
I began my day with some double blueberry oats—blueberry flax and blueberries.
Once home again, I made an old stand-by, Goddess Garbanzos. I also made a big bowl of slaw with apples and cranberries.
Dinner was a modified leftovers meal. The big discovery of this meal is the wonder of adding Laughing Cow to mashed potatoes. Cuh-razy good.
Alright, I have a take-home exam to do, and I want to finish before The Santa Clause comes on ABC Family at 9:)

Glad you had an amazing anniversary– Seth is one sweet boy, as well as vice- versa!
