Anxiously Awaiting Whitney
As groggy as I was when I arrived home (at 1:30 AM) last week, I couldn’t help but notice something out of the corner of my eye as I shuffled into my old bedroom. Across the hall, my sister’s room has undergone a transformation—it is now a perfectly composed pink and green masterpiece.
It seems that ever since we found out the sex of my sister’s unborn child (aka Whitney), my mom has been busy at work, creating the perfect abode for a baby girl. You would think that my mom had had her fill of girly decor after having three daughters of her own…but that is so far from the truth. The nursery is ruffled, polka-dotted, bow-emblazoned…and PINK.
A job well done, Mom. I am sure Whitney will love it:)
While we’re on the subject of girliness–Do you consider yourself a girly girl, or are you a tomboy? (Male readers can feel free to chime in too!). I consider myself pretty girly—I love shopping and perfecting my domestic diva skills…but I really couldn’t care less about makeup and jewelry. I don’t wear much of either!
Onto the eats of the day!
Pea Week continued this morning, as I made Mama Pea’s Skinny Elvis Sandwich for breakfast.
Technically, this recipe is designated as a “lunchtime” recipe, but I thought it sounded like the perfect morning meal…and I was so right. I loved this spin on the usual grilled banana-PB sandwich. I used creamy almond butter in this one, but I think next time I might try crunchy just for a little more texture. I served it up with almond milk mixed with—what else?—chocolate pea protein.
After spending far too much time getting my car serviced, I came home ravenous. I whipped up a quick pesto potato salad with an improvised creamy pesto sauce. Just stir together some prepared pesto and a little Greek yogurt…voila! Dressing.
Tonight, I prepared Ellie’s Fettuccine Bolognese.
My tweaks:
-I used whole grain spaghetti instead of fettuccine. For some odd reason, Target AND Harris Teeter were sold out of fettuccine.
-I used TVP instead of ground beef.
-I omitted the carrot because, well, I ate all my carrots yesterday at snacktime.
First of all—check out that pile of pasta! My serving ended up being HUGE. No complaints here! The flavor was also delicious, with just a touch of thyme, salt, and pepper. I also found it surprising flavorful considering there was very little sodium in the entire dish. Ellie knows her pasta.
I am off to settle in for the season premiere of What Not to Wear—love it!

I l-o-v-e the baby’s bedroom and the theme. I cannot wait to have my own baby and decorate the nursery. After four years of being happily married (finished college, got married at 21 y.o.), maternity is calling me. But we have to wait until I finish our doctorates (mine in Nutrition, yay) so I can have time for the little one.
I bought fresh berries yesterday to make strawberry pancakes and the Elvis sandwich. Yum yum.
Just one clarification–the room is basically green and white so that if there are other grand-babies (from my lips to God’s ear!), the room will be appropriate for either gender. The pink tutu might have to be removed!
Aww…I’m melting over that baby room. And that Skinny Elvis doesn’t look too shabby either!
