Apricot Almond Tuna Salad

This recipe was inspired by a Poor Girl Eats Well’s Cranberry Almond Tuna Salad.

Apricot Almond Tuna Salad

Serves 1

Ingredients

  • 2.5 oz pouch of chunk light tuna in water
  • 2 T non-fat Greek yogurt
  • 2 dried apricots, chopped
  • 2 T raw almonds, chopped
  • 1 t dried thyme leaves
  • salt & pepper, to taste

Method

1. Combine all ingredients in a small bowl. Spread on a flatbread to make a wrap or serve atop a bed of greens.
