Apricot Almond Tuna Salad

This recipe was inspired by a Poor Girl Eats Well’s Cranberry Almond Tuna Salad.
Apricot Almond Tuna Salad
Serves 1
Ingredients
- 2.5 oz pouch of chunk light tuna in water
- 2 T non-fat Greek yogurt
- 2 dried apricots, chopped
- 2 T raw almonds, chopped
- 1 t dried thyme leaves
- salt & pepper, to taste
Method
1. Combine all ingredients in a small bowl. Spread on a flatbread to make a wrap or serve atop a bed of greens.

The apricots are a creative and novel idea – probably pairs amazingly with the tuna!
I always seem to look at the b-hut around lunch time…makes me hangry.
