Asian Tuna Salad with Pineapple & Wasabi Peas
(Serves 1)
Ingredients
- 3 cups greens of choice*
- 1/2 red bell pepper, chopped
- 2 medium carrots, chopped
- 1 cup pineapple, chopped
- 2.5 oz pouch chunk light tuna in water*
- 2 T. soy sesame dressing*
- 1/4 cup wasabi peas*
Method
1. Combine tuna with one tablespoon of the dressing. Set aside.
2. Place greens on serving plate. On top, scatter pepper, carrots, pineapple, tuna mixture, and wasabi peas. Drizzle with remaining dressing,
Notes:
*I used spinach for this recipe, but feel free to substitute your favorite lettuce.
*Many of the ingredients in this recipe are high sodium, so I recommend looking for low-sodium tuna.
*I used prepared dressing (Trader Joe’s brand), but it would be just as delicious and healthful to make your own using soy sauce, rice wine vinegar, and a touch of sugar. Also, there are several other brands that make a “soy sesame” variety such as Newman’s. Be sure to keep an eye on sodium counts, whichever brand you choose.
*Again, I used Trader Joe’s brand wasabi peas, but there are several brands available. Look for them in the Asian foods section of your grocery store.

I love tuna with soy sesame dressing. I think they go so well together. I like the wasabi peas addition for crunch and the sweet twist from the pineapple. Yum.
