Assume the Position
So I spent much of the weekend much like this:
Yep, midterms have struck again. Yesterday was devoted to a research paper, while today’s fun and games included foodservice management vocab. Woo.
I hope you all had a more enjoyable weekend—what did you do for fun? Perhaps I can live vicariously through you…
Fortunately, I did have time to enjoy some good eats with Seth and his brother. Let’s check out the goods.
Saturday
I hardly ever have cereal for breakfast, as it doesn’t keep me full like oats and smoothies do. However, cereal does have one major advantage—it’s fast. I shoveled down a bowl of GoLean before settling in for a five-hour paper writing session.
For lunch, I whipped up a batch of Coconut Black Beans, this time with pineapple instead of mango.
With my paper complete, I headed out to Zest with the boys for dinner. I ordered the veggie soup with butternut squash and the orchard salad. Both were delightful.
Sunday
After a long walk with Margot in the crisp autumn air, I wanted a hot breakfast. Egg white scramble to the rescue.
Lunch was a simple hummus-guac wrap with a few crunchy accoutrements.
This evening’s meal was equally lazy, as I heated up some prepared veggie burgers for Seth and me. I transformed mine into a cheeseburger salad, loaded with plenty of ketchup.
I saved room for a little sweet treat after dinner. I prepared Ellie’s Vanilla Hot Cocoa.
My tweaks:
-I used almond milk instead of nonfat skim milk.
-I opted for special dark cocoa powder instead of the regular stuff.
Delish! I’ve always been a fan of cinnamon + chocolate (Mexican brownies, anyone?), so this recipe had my name all over it! I can definitely see myself making this again throughout the winter months.

I’ve missed it!!

Aww, I wish I’d had a cute dog to write my papers when I was in school! I really, really don’t miss those days.
