Awaiting My Arrival

I just got off the phone with my mom, and she informed me of all the things awaiting my arrival at home. Not only was she kind enough to pick up some Broccoli Hut essentials (e.g., Light ‘n Lively cottage cheese, apples, and veggies), but she also alerted me that the newest issue of Clean Eating arrived in the mailbox today. I can’t wait to read the mag from cover to cover and to put all that food to good use:) I head home on Friday morning though, so I must still trudge through classes tomorrow. What are you looking forward to this weekend?

This shake was thick and delicious, and I didn’t even have to add ice cream. It’s amazing what a crap-ton of frozen peaches can do for texture and taste.

Wednesday

I’ve made Marianne‘s magical tofudding before, and this morning’s rendition was just as delicious as my previous tofudding experiments. I’m thinking coconut butter might be a tasty addition to my next one…

You may recall that I made The Elvis sandwich (with tempeh bacon) last week, and I mentioned that I was toying with the idea of trying another Peanut Butter and Company Cookbook sandwich idea–The Pregnant Lady. Although the cookbook suggested bread and butter pickles, I tried it with dill because, well, I like dill pickles A LOT. My taste buds must beĀ  into freaky flavors lately–this combination was fantastic! What’s your favorite PB sandwich combination?

Dinner this evening was a bit of a smorgasbord. I found some leftover Amy‘s split pea soup in the freezer, then I dug around in the cupboards and found a sweet potato…and the randomness only continued thereafter. Nonetheless, it was quite a delicious and colorful meal, just the way I like it:)

    I’ve never tried the combo, but I love pickles and I love PB, so why wouldn’t I love them together, right?

  2. Wow. PB and Pickles? I am a HUGE pickle lover, I think I could live on them if I had to but, I have never had this type of sandwich. You use dill right? Verrry interesting….I am looking forward to heading home this weekend too. Can’t wait for some good homecooked food. I hope you enjoy yours!

    I have been reading your blog lately and I have to say that I LOVE your food! I truly enjoy reading your posts and seeing the things you make, your smoothies, salads, all great ideas.
    Although I was a biology major in college I am into nutrition and healthy food/eating, I love veggies and all fruits too and love going to farmer’s markets, whole foods and trader joes! :o )

    I’ve definitely had grilled pb & pickles and it’s delish. Admittedly I made it when I was SO low on groceries I practically had no other options, but yeah it’s good. With hummus and/or roasted red peppers too!

  23. I don’t eat peanut butter, but I do eat sunflower seed butter.
    I LOVE pickles!
    I would have never thought to put the two together, but I am sure it is delicious.
    My favourite sunflower seed butter combo is with apple butter.
    It’s delicious and I think it would be wonderful with peanut butter as well!
