Back to Baking

Last week, in surveying the pantry’s contents, I discovered that I have a bit of a protein powder surplus, nay, an embarrassing excess. Let’s just say that I have several canisters lurking about and a cookie jar full of Spirutein packets. Accordingly, I seized the opportunity to get back to baking and whip up a batch of Naomi’s protein muffins:

I’ve already tasted one (for quality control, of course), and it was tasty but not quite sweet enough for me and my monster sweet tooth. Not to worry—it’s nothing a little peanut butter can’t fix:)

What was the last baked good to come out of your kitchen?

Aside from taste-testing baked goods, I managed to eat a few other things today…

I arrived home from my run this morning, only to discover that my mom had eaten the last banana. Gasp! How was I to make my oat bran?? I settled for pumpkin instead and ended up creating quite a tasty bowl of oat bran.

I was in the mood for veggies this afternoon, so a Caroline-sized salad was in order. I topped my mound of veggies with hummus-filled hardboiled egg whites.

After browsing through some old issues of Clean Eating this afternoon, I decided to recreate a recipe from the July/August 2009 issue, the Spicy Thai Chicken. I substituted tofu for the chicken and added some of that Cashew Carrot Ginger Soup on top as a sauce. ‘Twas delicious.

I’m not feeling so great about myself right now, so I am off to lie down and watch some Bachelorette. Ciao.

  1. what’s in the air tonight!? i’m not feeling so great about myself, either, for a variety of reasons (lackluster run, lackluster work day, etc). some rest is in order for both of us!

  8. Pumpkin! Lucky; I’ve hunted high and low for that stuff every time I’ve gone to the grocery store since Christmas with no luck. I’m having a major craving!

  9. I just baked a cake Friday and now I’ve re-caught the baking bug! I’m looking to make some cookies next but I just need to find someone to load them off on ;)

  14. I made my Dad devils food cake for father’s day. It would out of a box though so I don’t know if that counts!

    The last baked thing to come from my kitchen would be the eclairs I made for my dad’s birthday. It’s when I discovered that I can not for the life of me make homemade vanilla pudding. ;) Your muffins look delicious!

  19. Last thing I made was granola/granola bars (half I crumbled into granola, the other half stayed as bars). Bummer about being no bananas after running! That’s one of my biggest pet peeves about living with my parents is never knowing what food will be around, and bananas never last (I’m sad without a banana in the morning!). Hummus-filled eggs is a genius idea, I definitely need to try that!

  20. Love Naomi! She has such great ideas for protein. Last thing I baked- bread! Great job on the dinner creation! The tofu looks like an awesome sub. Did you not feel good or not feel good about yourself? I hope everything is ok!

  21. ohh glad you made and liked the muffins! i agree they weren’t that sweet but I think that was probably better for me since I didn’t eat the whoel batch :) hehe try the soymazing muffins! those are SO SO SO good!!!

  22. I hope you are feeling better! I love your posts and creativeness and seeing your cute and gorgeous face in your pictures! And Bachelorette always makes me feel better, so hopefully it did the trick for you. It’s the only show I watch on TV – such a guilty pleasure, but I get so lost in it and the drama!! And Roberto is pretty darn attractive. And Kirk is such a cutie!!
