Back to School, Part II
Another day of classes is complete, and my hopes of a scintillating semester have only been reinforced. Here’s what I’ll be filling my brain with over the next several months:
- Seminar in Nutrition Topics are chosen and presented by more advanced nutrition graduate students.
- Research Methods Ugh. I thought after suffering through Research Methods for psychology, I would be through with this sort of class. I thought wrong.
- Principles of Foods This course is basically a cooking class from a scientific perspective (a la Alton Brown). We’ll learn various cooking techniques, including knife skills—maybe now I’ll finally quit having so many kitchen mishaps.
- Gastronomy For a description of this class, check out yesterday’s post.
- Lifecycle Nutrition II We’ll be studying nutrition in older adults and defining “successful aging.”
What are some your favorite classes from your academic career?
Here’s how I kept my tastebuds entertained today amidst my classes.
I’m on a minor mango kick these days, so I decided to incorporate some of this magical fruit into a parfait this morning. I also jazzed up the yogurt component by mixing plain Chobani with ginger, cinnamon, vanilla, and stevia. As for the crunch element, I busted open a fresh box of Puffins. Shall we take bets as to how long this box lasts? I’m thinkin’ it will be empty by Monday.
I had a 12:30 class today, so I packed a lunch to be enjoyed on campus. First, let’s take a look at the carrying receptacle for said lunch. Check out my sweet new lunch bag from Seth’s mom:

As for the contents, I packed a VeggiePatch Portabella Burger. I received a coupon for a free box of these burgers many months ago, but I was unable to locate them until now. I heart Harris Teeter.
Once home from class, I was craving something sweet. Although I contemplated making a smoothie for dinner, ultimately I satisfied my sweet tooth with a sweet potato smothered with sunflower butter.
Now if you’ll excuse me, I have some textbook-reading to do. Toodles.

Mmm that sweet potato with nut butter sounds amazing right now. I have some fries baking up for dinner, so I suspect there will be some nut butter dippage

Your classes sound cool but tough. I had a couple cool classes in undergrad, but not so much in grad school. Hope you have way better luck.
Hmm nut butter. Makes everything better. Except fruit flavored sorbet and mint gum. Found that out the hard way. Confessions of an addict.
Your Principles of Food course sounds awesome! Can’t wait to read about your experiences as the semester progresses.
Back to school already, oh gosh, summer is ending-booo. but that lunchbag is super cute, so that should make things a bit better ;D

Your lunch bag is adorable! I seriously need to break down and buy a new one.
Your classes sound so incredibly interesting!! I love that you have a second part to Lifecycle Nutrition. A lot of what I learned in that class, covered just pregnancy and childhood, and I can see how having *two* classes on the life cycle would be more beneficial in getting all the age groups in.
So far my favorite college classes have all been my favorites, not because of the subject really, but because of the professor. I have hope for this year though! The lunch bag is really cute and I literally gasped when I saw the deliciousness of that sweet potato!!
