BBQ Tofu Salad with Smoky Avocado Dressing
Take one glance at my recipe page, and you’ll see that I am quite fond of anything tofu-based. I’m always in search of new ways to enjoy this delightful bean curd, and what better way than to pair it with my favorite condiment, BBQ sauce! The Smoky Avocado Dressing adds an additional layer of flavor to the salad and can easily be paired with any salad combination.
BBQ Tofu Salad with Smoky Avocado Dressing
Serves 1
Ingredients
For the salad:
- 2-3 cups raw spinach or Romaine lettuce
- Non-stick cooking spray
- 1/4 small red onion, sliced into half-moons
- 1 small zucchini, chopped
- 1 ear fresh corn, stripped from the cob
- 1/2 block of tofu, cubed
- 2-3 T BBQ sauce, such as Bone Suckin’ Sauce or Stubb’s
For the dressing:
- 1/2 small avocado
- handful fresh cilantro, plus more for garnish
- juice of small lime
- 2-3 drops Liquid Smoke
- water for thinning
- salt, to taste
Method
1. Cover tofu cubes with BBQ sauce, and allow to marinate.
2. Thoroughly spray a skillet with non-stick cooking spray and place over medium-high heat. Once hot, add onions and zucchini. Cook until vegetables are soft and have developed a bit of char on their exterior. Remove from pan and set aside to cool.
3. Add BBQ tofu mixture to the pan, and sear until the sauce has become thick and sticky, adhering to the tofu.Set aside to cool.
4. To make the dressing place all ingredients in a food processor or blend with an immersion blender. Blend until it has reached a smooth texture; add water as needed for thinning.
5. Place lettuce on serving plate and top with onions, zucchini, corn, BBQ tofu, and prepared dressing. Sprinkle with additional chopped cilantro if desired.

I am *always* looking for new salad dressing recipes. Mostly because homemade tastes so much better than any kind you can buy in the store. And also because I love trying new flavors. This sounds so PERFECT.
