Beach-Bound
Remember Operation: Clean Eating? You may recall that the motivation behind said operation (aside from overall optimal health) was my family’s impending beach trip after graduation—the prospect of a week’s worth of bikini time inspired me to amp up the protein and skimp a bit on my granola habit. I’ll recap the results of Operation: Clean Eating in another post, but for now, let’s focus on the beach!
While I spend a lot of time by the lake with my family (and dogs)…
…it’s been years since I last caught a glimpse of the seashore. Accordingly, the past few weeks have included periodic daydreams of building sandcastles and swimming amongst the waves. I hope the rental house also has an adequate kitchen for culinary endeavors:)
What are your favorite beach-y activities? Aside from those mentioned above, I also enjoy reading a good book by the seashore, with my toes in the sand.
The fam is arriving in town this evening, and then we’re heading to Butternut Squash restaurant again for a vegetarian feast. It is sure to be a delicious meal—but I’m not so sure that I’ll have time to post this evening. Hence, my early posting schedule today. Here’s what I’ve been nibbling on so far today:
Due to my abundance of free time today, I decided to seize the opportunity with a leisurely breakfast. On the menu this morning was Tofu-Banana French Toast. It’s been far too long since this deliciousness last entered my belly.
Sorry to bore you with yet another salad for lunch, but my options are a tad limited now. All that remains in my fridge are random vegetables and a few jars of nut butter. Anyway, the star of this meal ended up being the golden raisins—how are they so friggin’ delicious?? I snacked on them while I was prepping the vegetables, and I think I’ve decided they’re my latest addiction.
OK, I should probably tidy up the apartment before the family arrives…then again, Hulu has been calling my name all day…Be back soon!
