Behind the Scenes of Duke Dining

As per usual, I had my weekly dining committee meeting tonight. However, the meeting’s agenda was slightly unusual in that we were all given a tour of the kitchen operations at Duke Dining; specifically, we toured the main on-campus eatery/dining hall, fittingly named the Great Hall. This evening’s presentation included a summary of what takes place on a daily basis at the Great Hall, a visit to the main kitchen, deep freezer, and the vegetable prep room (where I am sure most of my on-campus meals are prepared!).

I’ve heard some pretty horrific stories about other universities’ dining options, so I feel pretty lucky to have relatively healthful options here at Duke. Nonetheless, my love of cooking obviously outweighs my appreciation for campus fare:) How would you rate your university’s on-campus fare?

Sunday

Due to a limited frozen fruit selection last night, I took the chance and included blueberries in my hemp-based smoothie. Poor decision. It made that icky gel again. Blueberries and hemp do NOT mix.

Monday

My salty tooth was calling this morning, so I made a cottage cheese-based breakfast, with a side of olives. I can thank Rachel for opening up my eyes to the wonders of enjoying cottage cheese the savory way.

As mentioned above, we concluded tonight’s dining meeting with a meal at the Great Hall. I got my favorite—the salad bar, of course. The Great Hall boasts quite a wide variety of fresh vegetables and prepared items; some of the produce is even local and organic. No lame iceberg and soggy tomato salads here!

    My campus dining hall was SMALL. Not a lot of choice (the burger section was always the most popular) but they at least tried to provide healthy options. I’ll never forget that one time they did a seafood feast and I got a free platter of mussels in a white wine sauce! It was like heaven right there in a university cafeteria :P

  3. Oh will you please make me some hummus? You always have such great combos. I love it! BTW, I love savory cottage cheese dishes, too! I recently mixed some up with some canned salmon and added onion and dill. So good!

  8. My uni’s caffeteria… it’s better not to talk about that.
    I don’t eat there.Not a lot of choices, all oily foods, just hunks of meat. veggies aren’t welcome there :(

  9. sounds a good meeting! I’ve never dined at school but I don’t think there’s many healthy option out there!
    I’ve been have salty craving almost every morning since I got the grill.

  10. mmmmm peanut sesame hummus? I’m going to have to try making this delicious. Very cool that you got to tour the campus dining facilities!! Penn State’s food was OK. The main dining hall had a tendency to make me feel ill but all of the “specialty” dining places were good

  11. What a cool meeting you attended. Your eats look amazing. Im actually going to the Nasher (spelling?) museum at Duke today with my class to check out the Picasso exhibit! :)

  12. When I went to Ithaca College for awhile, their dining hall was amaaaaaaazing. A whole vegan station! And a great salad /. soup bar. It made eating salads every day fun :)

  13. I still can’t do savory cottage cheese.. but probably sometime soon since I’ve gotten over the texture!

  14. My college had horrible food. All I remember eating was fake Subway sandwiches!

  15. Our campus dining hall isn’t bad – but certainly isn’t good. I typically get the salad bar but I wish the items would change. It is the same thing EVERY day.

  16. Very cool. I would love the opportunity to investigate my dining hall more. It’s pretty good, with vegan and vegetarian options always.

  17. My college has CRAP food! It reminds me of high school: low quality, and greasy yet not satisfying. Good to hear there are some universities that serve food that’s not substandard!

  18. My campus cafeteria was pretty good, but the after-hours cafe was not so great.

  19. I find the dining options at UBC to be really good – there is a ton of variety on campus. Many places feature produce from our campus farm, and try and buy local. Sure, you still have all the usual chain places as well (hello Starbucks), but there is alot of choice for students. I still bring my food from home though – that will always be the cheaper option.
