Better Late than Never

As I signed off from my last post on Friday, I mentioned that I was heading out to the grand opening of some new buildings on campus. This much anticipated grand opening has been postponed multiple times; first it was to open in January, then mid-February, and finally early April. Aside from the continually changing opening date, there was crazy construction around my apartment for the past 8 months (translation: bulldozers at the crack of dawn).

Fortunately, all that waiting and aggravation appears to be worthwhile—the new “village” as it’s called are pretty sweet:

Saturday

My salty tooth was beckoning on Saturday morning, so I made up a batch of scrambled tofu. I served it up in a wrap, which was apparently a poor decision—I think I ended up with more tofu on my face and hands than in my mouth.

Before heading out to do some errands with Seth, I busted out the GF for a garlic-tastic grilled hummus sandwich.

For dinner, we decided to use up some of my stockpiled food points and order take-out from Chai’s. I ordered my usual the Japanese Soba Noodle Bowl with Tofu. Just as good as I remember.

Sunday

Breakfast this morning was all about the superfoods: bloobs, oats, wheat germ, and a big honkin’ blob of almond butter.

Leftover kidney beans=perfect partner for fresh avocado.

I was craving breakfast for dinner (brinner?) this evening, so I opened up a box of frozen waffles that have been in my freezer fo-evah:

Not gonna lie, this brand appealed to me solely for its prominent display of Cookie Monster on the box. I also appreciate that these waffles are egg-free…and miniature.

Alright, I am off to finish watching Up. Toodles.

  1. Oh my gawwwwwwwwsh that garlicky hummus was in my mouth for the rest of the night….even when everything came up!! I never want to eat THAT hummus ever again for as long as I live. Eggggghh.

    ….bad times. haha

  2. All of the new buildings look really nice! They serve tofu at your dining halls?? Jealoussss. Supposedly, we have the best dining in the country because they’re serving up steak and cheese fries *sigh*

  3. You might have to start feeding me with some of those stockpiled food points. Apparently im a bottomless pit this semester and have been eating through my food points like crazy.

  4. Wow, your new campus “village” looks fantastic! Of course the first thing I noticed was the masala tofu. Do you know what the rest of the ingredients are (I can only read part of the sign)? I would love to recreate it (even though I have no idea what it is actually like haha)? I’m also a huge fan of breakfast for dinner. I love cookie monster on your waffle box as well. Honestly, I’ve picked them up before because of the same reason (though I don’t think they’re vegan so I didn’t get them sadface).

    That gym is a little small though, for a college. I’d definitely keep hoofing it the 20 minutes!

  13. I am ridiculously jealous of all of this. It looks incredible! I’ve actually never tried an Amy’s burger, but now I want to.
    And that’s amazing that you have an on-campus restaurant with both tofu AND wild salmon! I could eat and eat and eat.
