After taking a look at this cartoon, I feel pretty confident that the B-Hut is located firmly within the “crap somebody cooked” category. (Although I haven’t posted an apple butter recipe…yet). I mean, I typically steer clear of political topics (aside from the National School Lunch Program), and I don’t have anything to sell.

What other kinds of blogs do you read? What are your favorites? I read mostly healthy living and cooking blogs, but I also have a few coupon blogs and home decorating blogs in my reader. I live and breathe by Southern Savers!

Now. Let’s get onto the crap I cooked today.

For breakfast, I busted out some pumpkin yogurt in parfait form.

Lunch featured Ellie’s Herbed Goat Cheese Dip.

My tweak:

-I used more Greek yogurt than required in the recipe. My goat cheese was particularly hard and crumbly, making it hard to blend, so I needed the extra fluidity.

Fresh herbs and goat cheese? How can you go wrong?! This dip was a lovely side dish to my hummus sandwich, and I can totally see myself making it in bulk just to have on hand for snacks.

It was another late night at school today, so I just slapped together a quick veggie meal with black beans and spaghetti squash. I was still hungry after finishing this plate, so I went back for the rest of the squash. Yeah, that’s right. I ate more than a pound of squash in one sitting.

Alright, Glee and What Not to Wear demand my attention! Eeee!

    That herb goat cheese dip looks amazing, and I love your tweak with the extra Greek yogurt.

    This recipe just used parsley and mint, but I bet it would be awesome with a variety of different herbs. Can’t wait to see what you come up with!
