Boredom Busters
It seems like just yesterday that I was whining about organic chemistry and anticipating the days when I could do absolutely nothing. Well, that eagerness for idle time has faded fast. Here are a few ways Seth and I attempted to bust the boredom blues this weekend.
This week’s Netflix arrival: The Weather Man
Verdict: Extremely depressing. Quite a contrast from last week’s She’s Out of My League.
Verdict: It looks like the vibrant ruffle dress is in the lead!
Verdict: Used a good $5 off coupon, received practically inedible food.
Verdict: Excellent! I know next to nothing about football (I promise I really am from Alabama though), and I still found it very captivating—I may or may not have cried a little during the pilot episode.
Raleigh Public Library
Verdict: I can now immerse myself in the world of Charlotte Simmons (again).

Here’s what I nibbled on this weekend…
Saturday
I couldn’t really decide which dried fruits/nuts to use as oatmeal toppers…so I just dumped all of them on there. It made for a colorful and delicious breakfast!
For lunch, I made a tofu salad wrap with Lemonaise, scallions, & pea shoots.
As mentioned above, Seth and I headed to CPK for dinner last night to use a recent coupon I found online (yes, my couponing habit has now impacted my restaurant choices too). I ordered the “Thai Crunch Salad” which is described as:
“Shredded Napa cabbage, chilled-grilled chicken breast, julienne cucumbers, edamame, crispy wontons, rice sticks, peanuts, cilantro, julienne carrots, red cabbage and green onions tossed with lime-cilantro and authentic Thai peanut dressings.”
I ordered it sans chicken and with the dressing on the side, and this is what arrived at the table:
A mess of fried noodles drenched in peanut sauce, and nary a vegetable in sight, aside from lettuce. Apparently I was not clear that I wanted both dressings on the side. Ugh. I found it rather unappealing, so we boxed it up for a meal for Seth later in the week. I guess I should have known that anything with “crunch” in the name is code for “fried and unhealthy.” Epic fail.
Sunday
I started today on a brighter note, with a refreshing morning swim followed by a lovely egg white omelet.
After last night’s disappointment, I was still in the mood for edamame. Edamummus it was.
Tonight, I made a big batch of gazpacho for Seth and me, along with a few flax-corn muffins. Really, it was just an excuse to eat copious amounts of fire-roasted tomatoes

It’s actually the “Kinda Corny Muffins” from Eat, Drink, & Be Vegan.
I’ve been on vacation mode for over 6 months and I still loving it!!!
I don’t find it boring at all. There’s so many things to do. Catching up with friends, shopping, movie, or just lay down to read a book!

ugh I hate it when salads are drenched in dressing! so unappealing!
That’s a shame that your salad from cpk wasn’t good! I always get their grilled vegetable salad. It has never disappointed me and is basically a vegetable fiesta.

I know, that’s what I usually get too, largely due to the hefty dose of avocado–but it wasn’t on the menu! Sadski, right?
Recipe for gazpacho, please? Everything looks so yummy– glad you had a wonderful weekend.
I’d recommend the white bean soup and grilled salad from CPK, my favorite!

i like the first dress best! edamummus- such a good idea! I tried lemonaise for the first time last year and it was so good!
