Busy Bein’ a Goof
As the Thanksgiving holiday weekend draws to a close, I realize that I spent it doing some of my favorite activities: picking out a Christmas tree, chatting with family,…and being a goof. Observe:
Whether you celebrate Thanksgiving or not, I hope you all had a restful and enjoyable weekend. Here are the details on my recent eats:
Friday
Gettin’ tropical again.
Saturday
After another glorious run in the crisp autumn temperatures, I returned home in dire need of some re-fueling…my beloved Ezekiel bread came to the rescue.
Then I headed out for some flouncing action at the Christmas tree lot and Sam’s Club. The only thing that could be almost as much fun is a plate full of scrambled tofu.
My parents and I headed out to see The Blind Side in the afternoon. SUCH a good movie! I may or may not have shed a few tears…When I came home, I was ready to eat anything in sight; I settled on a hummus wrap with some leftovers.
A heavenly smoothie ended the evening.
Sunday
More autumnal oats were on the menu this morning.
Truth: NOT a fan of Annie’s Green Garlic Dressing. Nonetheless, I ate this mess of a bean salad.
I lugged my copy of Eat, Drink, and Be Vegan home from school, but I had yet to use it for the entire week. In order to prove that I had not brought it along for nothing, I decided to prepare a recipe from it for dinner tonight: Orange Sesame Tofu.
I am off to finish packing and watch Father of the Bride. Ciao!

I find it wonderful that you have such a close relationship with your family, that is awesome Caroline! My family was always very close and happy to do things together, sometimes during the holidays I really miss having them around to carry on traditions like yours. Enjoy it, family is the best thing we have, those are the ones that truly loves us!

Looking gorgeous as always ~ I seriously envy your thick, shiny hair and ability to wear green. I love green clothes but just don’t suit them. I’ll have to live vicariously through your beautiful coat.
Hope the running is going well ~ if it’s not too nosey of me to ask, how far do you typically run? Do you have specific weekly mileage goals or just go with the flow? I only ask because I’m always interested in how different people organise their training regimes…perhaps I’ll get some tips to improve mine ; ) Also, I don’t know how you manage to prepare such artful, refined breakfasts post-run as I’m usually ready to chew off my arm by that point and presentation isn’t top of my list of priorities.
