Busy Little Booger

This weekend has gone by so fast—mostly because I was a busy little booger for the past two days. On Friday, I kicked off the weekend with Harvest Moon, my sorority’s annual Western-themed event. The hayride was mighty chilly, so I stuck close to the bonfire for much of the evening.

The rest of the weekend was occupied by far less exciting activities related to my ever-increasing academic workload. However, I did manage to squeeze in a trip to Trader Joe’s and to write up a product review today:) How did you spend your weekend?

Here’s how I fueled my study-fest:

Friday

Despite arriving home at approximately 2AM, I still really wanted my nightly smoothie. It’s true—I’m a smoothie addict.

Saturday

After sleeping in and going on a refreshing late morning run, my stomach was getting quite cranky, so I made a quick Banana Energy Sundae. Pumpkin + yogurt is delicious—I can only imagine how fantastic Stonyfield’s version must be!

With some major homework under my belt, I broke for a trip to Trader Joe’s, where I got some fun grub (be on the lookout for pumpkin spice granola and spicy black bean dip!). I returned home to make a majorly stuffed quesadilla. There was major guac-a-licious overflow.

For dinner, I just made a pasta salad out of leftover veggies and beans that were lurking in the fridge.

I also picked up a bag of frozen blueberries for quite a steal ($1.69!) at Trader Joe’s. I rejoiced not only for the low price but also for being able to make a blueberry Spirutein shake. Delish.

Sunday

I used a frozen banana in this morning’s pumpkin oat bran—perhaps that is why this bowl was such a deliciously thick texture? I added a hint of nutmeg to the mix for a little flavor twist.

I am mildly obsessed with the hummus-guac combination these days—it was the star of my lunch today, along with a certain beloved veggie.

Before running out the door to chapter this evening, I prepared a batch of tortilla soup with soy sausage, inspired by Clean Eating. This batch was just as delicious as the last one I made a few months ago.

There is no way that I am doing any more work today; I think I’ll pick out a few recipes for the week instead:) Good night, all!

  1. hummus + guac is sooooo dayum good. it is worth complete obsession. yay for a fun weekend of events – and i am not a huge marshmallow gal either. once in awhile, i like a good smore, but on the whole, no thanks!

    i am done doing work too, haha :)

  20. That Black Bean dip is quite possibly my favorite staple in the fridge. It’s just so darn versatile! Your use for it looks fabulous and I am glad that you had such a busy/fun weekend with your harvest fest.
