Camera Gems
Like any typical food blogger, I devote much of my attention to my camera, specifically to the pictures it captures and contains; sorting through the day’s photos and selecting those of the best quality have become part of my evening routine. Every now and then, however, I’ll discover a few shots on my camera which I do not remember taking. Indeed, my friends and family often find it endlessly amusing to leave subtle messages in the form of photographs on my camera, knowing that I will soon discover it as I sit down to compose my next blog post. As of late, Seth has become quite fond of this type of shenanigan. Here are a few of the most recent “gems”

Saturday
I can’t seem to find my beloved Rachel’s cottage cheese cups in the Durham area, so I attempted to make my own as part of my breakfast yesterday. Obviously, my salty tooth was beckoning.
For lunch, I temporarily reverted back to childhood and had a modified PB & honey sandwich, except I used organic PB, agave nectar, and raisins rather than the Skippy-honey combo from my childhood.
As the evening’s entertainment, Seth, his roommate, and I all headed out to The Blue Corn Cafe for a late dinner. As you may recall, the BCC is one of my favorite eateries in town, largely due to its extensive list of vegetarian options. This time I ordered the Black Bean Tortas, made with eggplant and various veggies, and served with mango-avocado salsa, rice, & plantain chips. As an added bonus, this dish was fully vegan, without any special ordering. While delicious, the tortas left me a little hungry afterward—this girl needs serious fuel these days.
Sunday
Remember that CoW sample that arrived last week? I put it to good use this morning by combining it with a unique fruit combo, banana-raspberry. It was a tasty duo, with a perfectly velvety consistency. Unfortunately, CoW is not vegan due to its inclusion of whey concentrate.
Lunch was a simple tofu stir-fry. I should make brown rice more often—so tasty, simple, and nutritious.
For dinner, Seth and I hit up the Great Hall. I made of my usual rainbow-tastic salad creations.
Alright off to watch the remainder of Life on the Discovery Channel. Ciao!

Matt will oftentimes leave picture surprises on my camera – most of them are unflattering pictures of me – candids when I tend to be making the most awful face…
Love that salad bar – I wish our cafeteria salad bar provided options like that!
Hehe…those pictures are great! Nobody gets their hands in mine but I often find random pictures that I don’t remember taking!

Gosh, the surprise picture i get on my camera are definitely SUPER random…like, i’ll get a picture of what looks like someone’s scalp. GROSS i know!!!! Sorry!
