Celebrating Steve-O
Howdy, bloggers! I hope you all have had as pleasant of a Fathers’ Day weekend as I have. My dad (aka Steve-O) and I spent much of the weekend together, doing our foodie thang: farmers’ market on Saturday, The Fresh Market today, and a celebratory meal with the fam this evening. Although 99% of our conversations consist of insulting one another (in jest) or quoting Christmas Vacation, I have a special place in my heart for dear old dad. Here’s a glimpse at our adventures through the years:

How did you celebrate Fathers’ Day?
The Next Food Network Star begins in a mere twenty minutes, so I must be brief:
Friday
Conveniently enough, the place where I purchased my dad’s Fathers’ Day present is right next door to my favorite health food store. While there, I picked up a packet of Fruitein, my beloved Spirutein‘s cousin. I had high hopes for this shake, but it tasted a bit like a Flintstones vitamin. Tootie frootie, indeed. Plus, the ingredients list rivals my chemistry textbook in length. The ingredients are all natural of course, but it was a bit odd to see that I was consuming everything from Jerusalem artichokes to pomegranate seeds.

Saturday
After our wildly successful trip to the farmers’ market, I sat down to a big plate of banana-blueberry pancakes. Totally loving this combo lately. Any ideas on how else can I enjoy the blueberry-banana duo?

While digging in the pantry, I found this salad dressing that I had purchased at TJ Maxx a while back. I was a bit skeptical, but the ingredients list was short and pronounceable; low-sodium too! It turned out to be fantastic! Rachel’s cottage cheese still rocks my socks.

Clean Eating Magazine featured a tortilla soup recipe a few months ago; I veganized it by using soy sausage and adding tofu sour cream. So filling and delicious!

Sunday
Fabulously fresh blackberries make any bowl of oat bran phenomenal. That walnut butter was pretty rockin’ too.

I dug into my Fresh Market goodies for lunch…lemon hummus! This was so creamy and uniquely flavored–none of that pasty flavorless stuff in this tub.

Dinner for the family this evening was a shrimp-orzo salad from A Lyon in the Kitchen, so I prepared a separate dish for myself–basically spaghetti with “meat sauce.”

I made dessert from my beloved ED&BV. My dad and I are the only ones in the family who enjoy coconut, so I used Dreena’s recipe for coconut cake to make a small batch of cupcakes, along with plenty of coconut frosting. I just can’t get enough coconut these days!

My dad doesn’t like celebrating things (his birthday and fathers day, mostly) so we just treat it like any other Sunday. I guess if there’s any day where he should get to spend however he wants, it’s father’s day, so it makes it soooooooooo easy for me and my mom.
That salad dressing looks fascinating. I love browsing the gourmet foods in stores like TJ maxx, home goods, etc!

Blueberries and Bananas are a great combination. I made Banana Blueberry bran muffins a while ago they were pretty good and a chunky smoothie too.

I love Rachel’s cottage cheese too, and first read about it on your blog. I current have some pear mangosteen in the fridge, mmmm. That tortilla soup looks super yummy too.
I adore coconut myself, so maybe I should dig through my copy of ED&BV and try that recipe. The cupcakes look gorgeous!
That lemon hummus sounds right up my alley! I crave the citrus these days!! When I was little I used to eat a big bowl of plain cheerios and fresh blueberries in the summer – so good
