Chattin' and Chompin' with My Girls
Today was all about good friends and good food. After my morning of classes, I met up with my roommate of three years (freshman, sophomore, and junior years) for lunch at The Refectory. Now that we don’t live together, we don’t get to chat nearly as often as we’d like. Once our fab catch-up sesh was complete, I headed back to squeeze in some serious research time before heading out to dinner with my current roommate, Alanna. Our conversation was in random mode this evening, as we talked about everything from Obama’s Nobel Peace Prize to instant oatmeal packets (who eats just one?) to Project Runway (which starts in just 20 minutes!). I love chattin’ and chompin’ with my girls.
Here’s the food that went along with all that girl-time.
Thursday
My smoothie appetite returned last night, thank goodness. Love this flavor of Spirutein–it tastes like pistachios!

Friday
I had a decidedly autumnal breakfast, complete with both pumpkin and apples. For the pumpkin component, I used this pumpkin butter that I found at TJ Maxx over the weekend. Yes, I did lug a jar of pumpkin butter several hundred miles in a suitcase–I love me some pumpkin. I also had another one of those luscious Honeycrisp apples. I am thinking I should never have tried them…I can’t afford another expensive food addiction!

As I mentioned above, I met Kristen for lunch at The Refectory. Although the menu is usually brimming with delicious and healthful offerings, I inevitably order one of two things: the vegan chili or legendary vegan dal. Today I went with the dal. Phenomenal as always.

Alanna and I headed to Elmo’s Diner again for dinner, and I ordered their hummus platter. I think it is safe to say that this hummus is my favorite restaurant-prepared hummus: it’s thick, slightly chunky, and pleasantly spicy. The pita bread is pretty amazing too–it was particularly warm and pillowy this evening.

I used to like the refectory a lot, but now that I've been eating at the blue express (which I kinda consider to be sorta similar to the refectory in terms of home-madeness and variety and etc), I've realized how expensive it can be !

Thick/chunky/spicy hummus with warm/pillowy pita bread is basically heaven on earth!!
Delicious breakfast! As for protein recommendations one of my favorite combinations is a packet of Spirutein mixed with 2/3 cup greek yogurt. It’s so good and super protein packed!

Is that pumpkin butter any different from Trader Joe’s? I gotta look out for it–larger jar, hehe!

The vegan dal looks amazing!! AND omg, Elmo’s diner.. where do you live if you don’t mind me asking?? I live in Carrboro NC.. there is an Elmo’s like 3 minutes from my house. I have only been there once and had the hardest time finding something to order!!!
I can’t believe I have yet to get something hot from the Refectory (minus my ooey gooey veggie panini but that doesn’t count)! I’ve only been to Elmo’s twice and have gotten chocolate pancakes each time haha. I could definitely go for that hummus though. Glad you got some fun company for your meals yesterday–I’m so bad at that

I was considering becoming a vegan and I was wondering if I could ask you, what’s your reason for being vegan? Is is to do with the healthiness of the food or the rights of the animals? Also, do you ever feel sick from the lack of meat and dairy and do you ever crave animal produce? Thanks

Pumpkin butter! I love pumpkin butter. I bought some last year from TJ’s I think, but it had honey (didn’t think I needed to read the label!), so it’s been much too long since I had any.
