Cheater’s Veggie Calzone

For all those times when you crave a calzone but don’t have the patience…

Cheater’s Veggie Calzone

(Serves 1)

Ingredients

  • 1 small garlic clove, minced
  • 1/2 cup canned, no-salt-added tomatoes, drained of liquid
  • 1 cup raw spinach
  • 1 6 inch whole wheat pita bread (with pocket)*
  • 2 oz part-skim mozzarella cheese, shredded or chopped*
  • 1 T fresh basil, chopped

Method

1. In a small nonstick skillet over medium heat, cook garlic until softened. Add tomatoes and spinach, and cook until spinach is just wilted.

2. Cut pita in two, and stuff each half with equal amounts of the tomato mixture, mozzarella, & basil.

3. Place stuffed pita on an electric grill (such as a George Foreman), grill pan, or outdoor grill. Cook until just browned on each side, about 3 minutes.

4. Allow to cool slightly before serving—the contents are hot! Enjoy.

Notes

*To be honest, I used two string cheese sticks for this recipe, and it turned out just fine. However, feel free to grate your own mozzarella or use pre-shredded varieties.

*My preferred pita breads of choice are the Whole Foods brand (found in the bakery section) and Toufayan, as they are sturdy enough to remain in tact during the grilling process.
