Chocoholics Not-So-Anonymous
My inner choco-beast has been ravenous lately—I just can’t seem to get enough chocolate.
It’s been sneaking into my smoothies,
…my oatmeal,
…my waffles,
…and now, my tofu.
I come by my love of chocolate honestly—I come from a mother whose mantra is “it’s not dessert if it’s not chocolate,” and whose day is not complete without a few M&Ms. Indeed, ever since I was a little girl, I’ve received a king-size dark chocolate bar in my Christmas stocking every year. My love for chocolate runs deep.
However, it’s come to my attention recently (ahem, since I started dating Seth) that not everyone digs the cocoa flavah as much as I do. Are you a chocoholic? What are your favorite ways to enjoy chocolate? Katie, you don’t need to answer this question
I kicked off the day with a dose of—what else?—chocolate, in the form of a parfait.
Once home from class and errands, I made a quick Waldorf Salad.
Dinner was dictated by an awesome bargain I got at the grocery store today. Kashi pizzas were BOGO at the Teet today, PLUS I had a coupon for an additional $1.50 off, so the final price was just two bucks. Shweet. It was pretty delicious to boot.
Seth rarely joins me for dinner on a weeknight, so I made sure to whip up a special dessert for the evening, Ellie’s Dark Chocolate Mousse.
My tweaks:
-I used 16 oz of silken tofu instead of 12 oz.
-I reduced the sugar by half, but added a little stevia extract.
I’ve seen zillions of dessert recipes using silken tofu, but I don’t think I’ve ever tried one this delicious! It didn’t leave that beany aftertaste that so many silken tofu recipes have, and it boasted a rich dark chocolate flavor, thanks to the generous amounts of cocoa and dark chocolate in the recipe.
The only drawback to this recipe? It was really messy. There was chocolate everywhere—on the counter, on my hands, and yes, on my camera (don’t worry, I licked it off). It’s a good thing I had an apron handy:)
I’ll leave you tonight with a quick reminder that my Summer-in-a-Box giveaway ends tomorrow, so be sure to enter ASAP if you haven’t already!
Good night and happy weekend to all.

The best way to enjoy chocolate is just a good old fashioned chocolate bar(I love Vahlrona). Time and time again I’ll make brownies or Oh Baby bars and that’s not so bad either

I love Vahlrona too! I discovered it last fall during “chocolate week” of my gastronomy class. I also like Chocolove.
I totally prefer vanilla over chocolate
I love your apron! It’s so cute. And that mousse recipe sounds amazing!
Oh my gosh, I am such a chocoholic. Although I contain myself, I always think about it
And how funny was that I looked at that chocolate mousse recipe today from my copy of Ellie’s book! I cannot wait to try it! Did you have to drain to tofu?

The recipe didn’t specify, so I just pureed the whole package, water and all. It didn’t seem to adversely affect the texture!
Cute apron! just makes baking/cooking more fun with one eh? This recipe looks fantastic! perfect for all the chocoholics
Hi there! Firstly, I love your blog. I also graduated recently with a psych/neuro major and am thinking about a degree in nutrition!
I am also a majorrr chocoholic which results in the need for me to consume it first thing in the morning. So, I always put a big spoonful in my hazelnut coffee! It’s amazing!
I don’t think a day goes by where I don’t add cocoa powder to something, haha. I’m glad i’m not the only one!
I’m not a HUGE chocolate person….strange, I know! I’ve enjoyed it more since I’ve been pregnant. Beautiful parfait
And I’ve never seen that Kashi Pizza! I’m going to pick one up for J and I. This would be a great easy post baby meal.
Hey, do you mind writing a post about all your cookbooks? I got curious seeing that picture of Seth in front of your bookshelf. It would be easy to see in only one post which cookbooks you own and like the most.

Great suggestion! I love talking about cookbooks, and I have a few definite favorites! I’ll add that to my reader request list for sure:)
Awesome. Thank you, Caroline!!
Your meal looks so quaint and perfect! I love pizza too, and your dessert sounds fabulous. I made a chocolate silken tofu pie a while back and it was heavenly. I’m a big fan of combining tofu with chocolate.
Actually. I’m a big fan of chocolate with anything.
I’ve been adding cocoa powder to my blended oats lately… it just makes it that much richer!
I’ve been really curious about the Kashi pizzas, too. I don’t think I’ve ever bought frozen pizza but it looks so good! Hope to find a coupon so I can justify buying it…
I LOVE chocolate! But REALLY dark. I’m talking above 90% dark. There is no point in eating a dessert that isn’t chocolate!! I actually can’t think of an exception : )
I’m a chocolate fiend, too, from milk to super dark. I love it in a green smoothie, a bar by itself (my current fave is Alter Eco Fair Trade Dark Chocolate Quinoa Midnight Crunch Bar — OMG!), and really fudgey brownies.
Everything is better with chocolate – but even better when with good, quality dark chocolate! Love the looks of that mousse – yum!
