Christmas Reminders

I look forward to this Sunday every year, as it marks the occasion of the 5th grade Christmas pageant at my church. Not only does it recall memories from 12 years ago when I myself performed in the pageant, but it also serves as a welcome reminder about the true meaning of Christmas. Between the recital of Gabriel’s speech and the simple rendition of “Away in a Manger,” my tears welled up with joy.

When I returned home, I discovered that the Sunday comics contained another heartfelt Christmas reminder:

Heck, even my dishware puts the “Christ” back in “Christmas.”

Now that I’m more grounded amidst the commercial chaos of the holiday season, let’s get onto the eats.

Saturday

I just can’t get enough pumpkin oat bran goodness these days.

After a last minute run to UPS and the grocery store, I came home for a simple lunch.

As per Yoder family tradition, we headed to a showing of White Christmas last night. But first, I fueled up with some Mashed Potatoes & Parsnips with Tempeh Bacon & Cheese. This version featured both cheddar and mozzarella for the cheese component.

Sunday

More tempeh bacon was on the pre-church menu this morning.

Lunch was a modified version of my Strawberry Fields Forever salad in that I substituted the more seasonal apricot for the strawberries.

I offered to prepare dinner for the fam this evening by cooking up a batch of Butternut Squash Stew with White Beans. You may recall this soup from my Thanksgiving visit with Seth’s family—I liked it so much that I requested the recipe! Given that there is hardly much leftover, I think it was a hit!

Alright, I am off to prepare for Seth’s arrival tomorrow:) Good night

  1. Have you ever tried cooking your oatbran in coconut milk. If not, give it a shot ;)

I feel you pain–I was pretty honked off when I didn’t get to be the narrator in the pageant. Their loss!
