Closer to the Finish Line

In approximately 40 hours, I will be finishing my last exam…and I will be one step closer to being a senior in college, a frightening notion, to say the least. Nonetheless, I am looking forward to a summer of new adventures. What are your plans for the summer?

While I have not yet crossed the finish line of the academic year, I did cross the finish line of the Angels Among Us 5K today. I competed as a team with a few of my sorority sisters in honor of a Chi Omega alumna who was treated at Duke Hospital several years ago. This race had a different “energy” for me in that I felt a connection to the cause for which I was running. Anyway, I don’t have my official time yet, but you can be sure that I’ll update when the results are posted. I also have some great race SWAG to show you:)

Friday

It’s hard to believe that I used to refuse to combine fruit and chocolate because I thought “it would taste weird.” Pshaw! Blueberries and chocolate are made for each other–plus, it makes for quite the antioxidant duo.cimg7055

Saturday

After my race today, I was hot and hungry, so I made one of my signature parfaits for breakfast. I probably should have nuked the frozen strawberries for a bit, (read: several brain freezes were involved in this breakfast) but at least it cooled me down quickly.cimg7056

I built up quite an appetite reviewing journal articles and Power Points, so I made Baked Bean Stew again. However, I think the star of the show was the salad:)

Another freezer meal tonight. The Chik patty-hummus combo was pretty awesome. I also remembered to peel the mango before cutting this time, making its consumption much more enjoyable than the last one.
