Coconut Black Bean Soup

I won’t lie, this simple recipe was born out of desperation to avoid leftover refried black beans.
Coconut Black Bean Soup
(Serves 1)
Ingredients
- 1/4 yellow onion, diced
- 3/4 cup vegetarian refried black beans, preferably low-sodium
- 1 cup coconut milk (such as So Delicious unsweetened)
- 1/2 t ground cumin
- 1/2 t chili powder
Method
1. In a medium saucepan, cook onions until soft and translucent.
2. Add the rest of the ingredients, and stir to combine. Allow to come to a simmer, and puree with an immersion blender or by transferring to a blender.
3. Serve with grilled bananas and kale chips!
