Creamy Spinach Pasta with Tomatoes
Ah, cottage cheese. The chief reason why I am not a vegan. There simply is no replacement for this protein-rich, creamy staple of my diet. While I love it for its sweet applications, it also happens to make a pretty bad-ass savory sauce. Hence, the recipe below.
Creamy Spinach Pasta with Tomatoes
adapted from a recipe by Clean Eating Magazine
Serves 1
Ingredients
- 1/2 cup cottage cheese (1% milk fat preferred)
- 1 small clove garlic
- 1-1/2 cups fresh spinach (rinsed and dried)
- 1 T. fresh basil
- 1 T. fresh oregano
- 2 T. water for thinning
- 1.5 oz (dry) whole wheat pasta
- 1 small plum tomato, chopped
Method
1. Boil water for pasta and prepare according to package directions. Drain and set aside.
2. Place all ingredients except pasta and tomato in a food processor or blender. Process until smooth.
3. In a large bowl, toss pasta with sauce until all noodles are well coated. Top with tomato and serve.
Note: I did not include additional salt in the recipe due to the high sodium counts typically found in cottage cheese, If you happen to use a low-sodium or no-salt-added variety of cottage cheese (such as Friendship brand) additional salt may be necessary.

I used to make pasta very similar to this! The uses for cottage cheese are limited only by one’s imagination if you ask me. I <3 that stuff!!!

I wasnt really a big fan of Spinach for many years ( lie, I hated the stuff), but after shacking up with a vegetarian I kind of had to put up with it, and have slowly come to love the stuff.
