Doin’ the Happy Wiggle
This afternoon, I braved the 95-degree heat to fetch the mail. I flipped through the day’s stack of lame-o catalogs and bills and was about to dismiss today’s haul as void of anything interesting—until I noticed a big envelope bearing a recognizable emblem:
Samford University is one of the schools to which I applied to obtain my nutrition degree. Just as I did during my senior year of high school, I anxiously ripped open the envelope to learn the admission decision.
Yee-haw! I’ve been accepted! I am still waiting to hear from another graduate school, but it’s nice to know that I’ll be able to begin my nutrition education somewhere come the fall of this year.
Like any technology-obsessed member of my generation, I immediately texted everyone in my family (plus Seth, of course) to spread the good news. My brother-in-law Major, ever the eccentric, replied with the following message:
“I’m doing a happy wiggle for you.”
While not a typical way to express congratulations, it was oddly fitting. So now I, too, am doing a happy wiggle to celebrate:)

Many moons ago, on a Whole Foods excursion with Allie, I purchased a new grain:
I was apparently in an experimental mood this morning, because I reached for these rye flakes instead of my usual oatmeal or oat bran. The verdict? They took a little longer than I had anticipated, and they didn’t get the creamy texture I crave. However, I’ll give these flakes another try—any recipe suggestions?
For lunch, I used up the last of my hard-boiled eggs in a slightly unexpected way. I removed the yolks and filled the void with hummus—‘twas a protein-packed treat. Add copious amounts of veggies and Goddess dressing, and you’ve got one glorious meal.
Thanks in part to the ridic heat in Alabama today, I was in no mood to cook this evening. Mock Tuna Salad to the rescue!
Now I am off to pick out my outfit for a wedding I am attending tomorrow—have a fab weekend, everyone!

Conratulations!! I will most definitely wiggle away for you! I would love to study nutrition, even though my career plan has nothing to do with it…maybe one day.
I like getting the whole foods mixed grain cereal with lots of different textured flakes, so I guess texture is my thing, but if you want something creamier, I’ve put the flakes in the food processor before cooking to make it almost powder like. THAT makes for super creamy oats!
Congrats Caroline! The last time I did a happy wiggle was probably when I found out I got into the Dietetics program at UBC.

. I love the hummus in place of the yolks. I bet that combo was so tasty. I’ve never used rye flakes before. I hope you find a tasty way to cook them up.

If you add some turmeric to your hummus you can get an yellow hue to mock a deviled egg! Which I hate by the way, but now I can pretend a deviled egg with humus inside, I just absolutely love your idea!

congrats on getting into nutrition school! the only advice I have about the rye flakes is to cook them low and slooooow with extra liquid to make them creamy – it always helps to add some whipped banana to the mix, or even unsweetened applesauce

I think rye flakes are often in muesli- mix it with other flakes (oats, rice, etc), add in some dried fruit, nuts and seeds and just soak overnight in fruit juic like the Swiss do! or pour milk over and eat raw like the brits do!

Hi! Congrats! I just made a smoothie, which I am calling “The Caroline Smoothie.” I got the recipe from Whole Foods, and it feeds two. It’s:
1 cup frozen whole strawberries
2 tablespoons smooth almond butter
1 cup chilled soy milk
It is yummy. Are you proud of me?
