Doing What I Do Best
My entire day today was spent doing what I do best–organizing and obsessing. I put away my mountain of trash belongings in their proper places for the summer, organized the abyss known as the household pantry, thoroughly expunged my wardrobe of its superfluous items, and unpacked my remaining clothes. Yeah, that pretty much killed the day, but at least it ended with a sense of accomplishment. How did you spend this Hump Day?
If you’ll recall, last night I mentioned that I had several packages waiting for me when I returned home. Here’s the rundown of my foodie loot:

Wednesday
I found some tofu and mushrooms waiting for me in the fridge, so obviously I made scrambled tofu for breakfast. Never gets old.

Amidst my organization frenzy, I assembled a nut-butter basket for breakfast-time convenience. Look at the (shameful) final result:

This doesn’t even include my refrigerated jars! The scary thing is that this won’t last long.
I took a short breather for lunch but kept it simple. I foresee more sun-dried tomato dishes in my future.

For dinner, I decided to try the Buitoni samples I received via Foodbuzz. I did not do adequate research before agreeing to review this product; I was unaware that the agnolotti included both cheese and eggs. Never one to waste food if I can help it, I ate it anyway…and it was delicious! The overall taste experience was quite creamy and satisfying, and I always enjoy a little ‘shroom action. Due to its inclusion of eggs and significant amount of cheese, I likely wouldn’t purchase this again. However, I think this product would fit well into the busy omnivore’s lifestyle (e.g., my parents!); it takes a mere 4-6 minutes to boil up the pasta.

Glad you’re enjoying the start to summer!! Re-organizing, smoothies, a tofu scramble and some good wraps….what could be better!
PS if you get a chance, could I get your exact recipe for the tofu scramble? I’d love to make it once I’m home!! I need specifics though, I am such a newbie at all this cooking!!

woooo…. that’s a big stash of nut butter there!!! Do you have all them opened at the same time? I usually only have 2-3 opened because I’m afraid they’d go bad.
And which nut butter do you put in the refrigerator and which you don’t? I always wonder what’s better.

Oh my goodness we have a lot in common!! I LOVE the feeling of finally getting things organized, it is always such a relief. So excited for you to try Ani’s cookbook and I cannot wait to see what you make! The nut butter basket is awesome! The PB & Co. White Chocolate Wonderful is one of my favorites!!!! I told myself I had to use up the butters I had before I could buy more though! You’ll have to take a pic with the Zesty shirt. I haven’t ordered one, but it sounds like it is for a great cause!!!
