Easter Blessings

This Easter weekend has presented a perfect example of how truly blessed I am. It was filled with all my most beloved people, activities, and, of course, foods:

On Saturday morning, Seth and I skipped across the street to the local farmers’ market, where I bought some local honey, a bag of kale, and a little treat for Margot.

 

Although all their treats looked perfectly wholesome and dog-friendly, I chose a bag of sweet potato chips from The Twisted Sisters Barkery.

That afternoon, I introduced Seth to the art of Easter egg dyeing. He was quite infatuated with the teeny egg dipper.

We greeted Easter morning with a sunrise service held in Meredith’s outdoor amphitheater. Just as the service ended, I captured a shot of the dazzling morning sun.

Saturday

Due to some progress made in my pantry clean-out, I discovered an unopened jar of Nuttzo hiding in the shadows. It adds delightful crunch and saltiness to a bowl of oat bran.

Amidst a frenzied paper-writing session, I broke for lunch, filling up on a few B-Hut standards.

The kind folks at Boboli recently sent me a coupon for a free pizza crust, and I put it to good use yesterday with another egg pizza. Both Seth and I raved about the crust—with reasonable nutritional stats and recognizable ingredients, we’ll be buying these crusts in the future, for sure.

Sunday

After the service this morning, I came home and prepared a particularly delicious parfait.

I caught up on a few episodes of Ellie while eating lunch.

Mid-way through my soup, I remembered Meghann’s peanut/raisin/split pea soup combo. I’m all for anything salty-sweet-crunchy—it was delish!

For the celebratory meal this evening, I improvised a vegan shepherd’s pie. I’m pretty darn pleased with the results…as was Seth—he licked his plate clean!

Tomorrow marks the beginning of the last week of classes—I couldn’t be more excited! Enjoy the rest of your evening, bloggigans.
