Eating Local at the Lake
As I mentioned in my last post, I ventured to my family’s lake house. In addition to our time by the water, we took a short road trip to Serenbe in Palmetto, Georgia. Serenbe is small community made up of vacation homes, sustainably-minded shops and restaurants, as well as an inn. Every Saturday, Serenbe hosts a small farmers’ market; it is for this occasion that my parents and I traveled to the destination. It was a great way to spend a summer morning, surrounded by people with similar environmental values to my own. I had fun poking around the town too–there were plenty of things to see and dogs to meet. I came home with a sack full of veggies (heirloom tomatoes, baby carrots, and sorrel!), plus a few jars of fresh honey and homemade jellies. Get excited.

I have much to catch up on, so let’s get to the grub:
Friday
Swiss chard fresh from my garden makes for good eats. I combined it with red beans, rice, soy sausage, and assorted spices for an easy, quick dinner.

Somehow, we didn’t have any soymilk at the lake house, so I had to settle for skim milk. I didn’t actually notice much of a difference in taste, but I’ll be sticking with the non-dairy stuff.

When I’m at the lake, cooking takes a back seat…Sometimes simple tastes best, right?

This cereal tastes just like Cinnamon Toast Crunch, but it’s pleasantly moderate in sugar content. Yeehaw.

Sunday
Bananas and dates make an excellent combination. Why didn’t I discover this tasty duo before?

Once back from the lake, I prepared another easy lunch. All my favorites in one meal: PB, hummus, and veggies.

PB & vanilla agave sandwich; veggies & hummus; grapes

Continuing the lazy trend, take-out was on the menu for dinner. For the cashew sauce, I simply thinned out cashew butter with rice vinegar and soy sauce. Nom, nom.

Chinese takeout: steamed veggies (to which I added edamame & my own cashew sauce); plain yogurt with orange segmetns & a crumbled fortune cookie


Now I must attempt to study for my lab final tomorrow while simultaneously watching The Next Food Network Star.

I just came back from my road trip yesterday and we saw tons of cows and horses, no piggies, though!
That cinnamon toast crunch cereal sounds awesome. I often found the former cereal too sweet so that sounds perfect for me

everything looks great, as usual. sometimes simple really IS best. i find that to be true a lot of the time. and i think your dogs are probably the cutest things ever! and ugh, the next food network star didn’t record at my house. good thing FN plays so many repeats! have a wonderful…what’s left of this sunday. hah.

My personal fave? The Cinnamon Toast Crunch smoothie! I love that you topped it was the actual good stuff to bring out that flavor – I used to have a bowl almost every day when I was little…and maybe freshman year of college, too!
