Farewell to Summer

As Labor Day approaches, the inevitable end of summer has finally arrived. Summer 2011 was another one to remember…

It all started with a little Gremlin who answers to “Margot.”

My love of coupons intensified.

Reader Request Thursday was born.

We partied it up at a lakeside wedding.

There was lots of ice cream involved.

A very special couple announced that they’re adding another girl to the clan.

Despite soaring temps, we managed to squeeze in a little outdoor exercise.

Daddy celebrated another birthday.

Looking back at all the fun I had this summer, I’m a little reluctant to see it end…but I’m sure the fall will be just as eventful:)

Here’s what went down for this last weekend of summer…

Saturday

Due to some granita-making I did this weekend, I found myself rummaging through the freezer—where I found half a loaf of Ezekiel cinnamon raisin bread. Breakfast was a no-brainer.

Last weekend, I happened to take a look at Seth’s pantry. Much to my dismay, it was nearly empty, save for a can of beets and a box of crackers. We hot-footed it to Kroger yesterday afternoon for a much needed stock-up. Once back at my place, I made a simple salmon salad.

We happened to be in Durham yesterday evening, so we seized the opportunity to hit up a long-time B-Hut favorite—Elmo’s Diner. I got my usual egg white omelet. Gotta love all-day breakfast!

Sunday

After an early morning church service today, I came home and made a quick Fried Egg & Avocado Breakfast Sandwich. Seriously. It never gets old.

As I plugged away at homework this afternoon, I wasn’t really in the mood to cook, so I just threw together a salad.

Tonight was our Labor Day feast, so I prepared some summer faves: Oven Fried Tofu, broccoli slaw, and corn on the cob. Yum, yum.

I am off to relax—I am delighted to have neither work nor class tomorrow. Yee-haw! Enjoy your evening!

  1. everyone in the food world seems to be having salmon for lunch today, including myself! and I agree that dill goes with it so well, I had to add some to my wild BC salmon patty part way through eating…

    Hmm, highlight for me would probably be going to Minnesota and getting to see my college friends and grandparents.

  5. Summer is always slightly depressing to say goodbye to but at least we have fall to make it less painful-I’m not sure I’d survive summer straight into winter, or even spring.

  8. For once, I am actually glad summer is ending. Ours has been way too hot with a multitude of days in the high 90′s or 100′s and almost as high humidity. I LOVE the cooler fall evenings and the beautiful colors. With winters being pretty short in Alabama, I don’t dread them like I did when we lived in Pennsylvania. I like the comfort foods of colder weather too. I am far more likely to eat a bowl of warm oatmeal when the weather cools. Ditto for mac and cheese. But I will miss the fabulous berries and melons this summer produced. I don’t think I had a bad cantaloupe all summer and the blueberries were so plentiful and sweet. On to the next chapter….a grand daughter!! :)

  10. Summer seemed to fly by! i wish I had done more “memorable” things, but alas, sometimes it just doesn’t go that way.

    The oven fried tofu looks so crispy and delicious.
