"Feed Me, Seymour!"
My stomach went all Little Shop of Horrors on me today–it kept on screaming, “FEED ME.” I guess my hilly run this morning demanded more fuel than I thought. Do you ever have days when your appetite is annoyingly persistent? Sheesh.
Here’s how I’ve been keeping that pesky tummy tamed:
Sunday
One drawback about hemp is that it makes my smoothie creations less photogenic–the dark color of the hemp obscures the vibrant hues of the fruit. Oh, well–the taste and nutrition are worth it.

Monday
This morning I delved into my PETA cookbook (reviewed here). I opted to make the Wowie Maui Tropical Fruit Spread (p. 222), which calls for vegan cream cheese, fruit, and coconut. I made my own vegan cream cheese by combining silken tofu with some raw cashews; I also added some almond extract and orange zest for flavor. I really enjoyed the end-product…but it didn’t keep me full for very long.

For lunch I turned to ED&BV for inspiration; I decided on the Peanut Sesame Hummus. The only change I made to this recipe is that I used tahini instead of sesame oil–close enough, right? Anyway, the results were phenomenal. I am SO glad I made a double batch. Look for it again in the future:)

I finally found the elusive lemon verbena variety at Publix last week. Good stuff, but I think the pear mangosteen is still my favorite.

I guess I was cookbook-happy today, because I used another recipe for dinner: the Bean and Corn Tortilla Lasagna from ED&BV. I left out the optional cheese component in order to keep sodium counts in check; I don’t track my sodium intake, but I have a feeling it’s in excess of the RDA these days. Loved the crunchy corn chip topping!

When I read that you went to Publix, I got all excited thinking there was in NC…soo I went to the Publix website and put in my zipcode, but the closest one is in Charleston
Then I realized you must probably be back home or something.
I had the best baked bean meal this weekend inspired by you and your recent Amy’s post! I mashed Amy’s beans on a whole grain sandwich thin and broiled each half with a little swiss. YUM. Sort of like a sloppy joe, minus the meat.
omggg i LOVE musicals SO much it’s not even funny — ive seen over 30 over them! (yeah…not the most cost-friendly hobby but nothing makes me happier!) i don’t know if i could EVER pick a favorite though!!

I haven’t seen many musicals but I’ve always wanted to see wicked! It seems like so much fun! Someday……
I adore musicals – asking me to pick a favourite is excruciating!! I currently had Wicked, Avenue Q and Evita on rotation as CDs to play in the car, but love it all -Gene Kelly musicals, Judy Garland musicals, Disney musicals, the musical episode of Buffy… everything!!
Grease is my all-time favorite, but I really think its the movie because I was in love with John Travolta as a little girl, haha.

I def have those days (especially after big workouts) where my tummy just growls and growls! At least we know our metabolisms are working!

I’ve had my eye on the Bean & Corn Tortilla Lasagna recipe for a long time, but I’ve still never made it! Yours looks phenomenal! I love the Peanut Sesame Hummus, too. I never have tahini around anymore so it’s one of the few hummus recipes I am able to make on the fly.
Oh goodness, I would take one of your hemp smoothies any day – the color has never bothered me! They always look delicious.
I don’t think I can pick a favorite musical! I haven’t seen it live, but the soundtrack to Caroline, or Change is amazing. I would love to see it in person… But it’s one of those musicals where all the dialogue is sung – nothing is actually spoken – so you can get the gist of the musical without even watching. I did theatre for like 8 years and was even a theatre major for one year, so musicals have a soft spot in my heart. <3

You WERE cookbook happy today! I’ll be getting How to Cook everything Vegetarian for my birthday Thursday (I peeked!lol) and I’m so excited.
As for musicals… I’m a ballerina. When we’re not dancing we’re singing random Broadway themes in elevators. It’s just what we do. ;P Some of my favorites are Evita, West Side Story (I feel pretty anyone?), and Moulin Rouge (not a musical, but an awesome soundtrack for belting out around town).

Would you recommend ED&BV as a beginner’s cookbook? Since I’m going to be embarking on my senior year in college, I’m wanting to learn to actually MAKE things in the kitchen.

I definitely have days where my stomach won’t quiet down no matter how much I feed it. Most of the time it has to do with my lady time, if you know what I mean, but it’s also a negative result of when I don’t get enough sleep.
The peanut sesame hummus with broccoli sounds so good! I can’t believe I still don’t have ED&BV…
