Feeling Accomplished
That’s right, I am feeling quite accomplished today, after a weekend of completed tasks, (some fun, some not so much). I finished a 10-page paper, cleaned the apartment, ran in another 5K, and even had time to write a product review. As a girl who gets a thrill out of crossing things off her to-do list, I am quite satisfied with myself. How about you? Did you get anything accomplished this weekend?
Race Report: The 5K was the perfect study break, just as I had surmised. I ran it with a few friends (Hi, Rosalie!), and it was a great way to spend the afternoon. The course was significantly harder than my first race, with plenty of hills, but I managed to keep up the pace. I am still waiting on my official time, but I’ll keep you updated:)
In the midst of my frenzy of productivity, I managed to eat a few things along the way. Here’s the scoop:
Friday
Snackage:

Plain Chobani with Blueberry PURE bar
I picked up another tube of that prepared pesto that I liked so much a few weeks ago. This time I made a pesto pizza with it–the possibilities with pesto are endless!

I’m glad I gave the Vega smoothie mixes another chance. While I still am not a fan of their “health optimizer” products, the Smoothie Infusions are quite delectable.

To fuel up for my race, I chowed down on a new kind of waffles. I topped them with a sauce inspired by the Creamy Cashew Dip from ED&BV, which I have made previously on various occasions. For some reason, it turned out rather thin this time, so I am calling it a “sauce” rather than a “dip.” Tasty, nonetheless.

After the race, I was ready for food–pronto! I had intended on making the mock tuna salad solely out of chickpeas, but there weren’t quite enough…so tofu went into the mix as well.

Amidst my paper-writing, I took a break to chat with Mom and nibble a Larabar. This flavor is yet another keeper.

I opened up a can a soup for a quick dinner. Mmm, how I love “scoopable” soup. Check out my review of this soup here.

My order from LuckyVitamin finally arrived, which means no more complaining from Caroline about her protein powder dearth. Oh, HempShake, how I have missed you.

Sunday
Sunday’s breakfast continued the alphabet oats saga. There are plenty of my favorite foods that start with “C,” so I had quite the delectable bowl of oats.

"C" Oats: cocoa, cherries, cashew butter, coconut, plus rice milk

After finishing my paper, I settled down for my midday meal. I love pouring leftover soup over baked potatoes–it’s one of my favorite ways to “revamp” leftovers.

With the school year drawing to a close, I need to use up some of my freezer goodies. A Lightlife SmartDog was on the menu last night.

Monday
I am still looking for creative ways to use up my Chobani bounty, so I made it into a smoothie today. It was much creamer and thicker than my usual rice milk + frozen fruit combo.

Currently, I’m reading An Anthropologist on Mars. It’s a selection of short non-fiction pieces that we are using in my creative non-fiction course.
I’m reading “The Tenderness of Wolves” by Stef Penney, and it’s great so far! I’m a member of goodreads, so I’ll have to join the food blogger book club

Yay for type A’s! I LOVE, LOVE, LOVE crossing things off my to-do list. In high school I had a color-coded day planner. Each subject had a different color. The book covers, notebooks, and highlighter were all in that certain color. Then I highlighted the assignments for that class in the same color. OCD much? But it totally floats my boat. Now I can’t wait to get in school again so I can start a new day planner!
How did your stomach handle the cashew butter before the 5k? I had toast with cashew butter before my first, infamous race and ended up throwing up half way through… it wasn’t pretty. I have a hard time figuring out what to eat before I exercise. Any tips?
The rest of the eats look great! You’re making me hungry.

[...] Scoopable soups are the way to go! Ironically, I was reading her blog AS I was eating this (I know, I know). After dinner I watched House (so sad!!) while doing day two of my 100 workout. I’ve never had much upper body strength so I can’t even begin to tell you how sore I am from the 100 push ups. No joke, my abs, ribs, back, and arms all hurt – I LOVE IT!! Since my abs were sore, I decided to do my squat day Monday. I modified Kristie’s plan a little bit. Instead of 100 squats I did 5×10 step ups on each leg (step up on the computer chair with one leg) and then 5×10 wide stance dumbbell squats. After this mini-sesh, I stretched like crazy. I’m already getting a lot of my flexibility back which is nice. I still wasn’t hungry but knew I needed a bed time snack (that makes me sound like I’m 5). Enter CC [...]

Checkmarks on your To Do list are fabulous! My husband and I did some landscaping projects this weekend that made us both feel good.
I need to look for prepared pesto at the grocery. You make it look so versatile!

I love feeling accomplished but it doesn’t happen all that often—I usually feel like there is always SOMETHING I could or should be doing!
So, I am the self-proclaimed “Queen of the Waffle Tower” hehe, but I’ve actually only tried Kashi waffles for some reason! Is there any chance you would want to do a review on different brands, or just let me know which is your favorite?
