Flouncing through the Flakes
Today, something glorious happened. It snowed in Alabama. Not only that, but it was ironically warm enough for me to run outside this morning. After 6 days of running deprivation, I was overjoyed when weather.com told me that the temperature was a toasty 30 degrees this morning. Not gonna lie, I let out a little squeal of joy upon learning the news. 7.5 miles later, I was covered with snowflakes and completely refreshed.
In other news, today marked the first of many Vegan Thursdays, as established by a certain chocolate-covered vegan.
Onto the vegan eats of the day:
Wednesday
Blueberries N Cream Spirutein. Yet another thing that always puts me in a good mood.
Thursday
Upon returning from my run, I celebrated with some superfood oat bran. I tried to fit as many superfoods into one bowl as possible: oat bran, cinnamon, almond butter, pomegranate, and flax.
After running a few errands with Mumsy amidst the snowflakes, the cold started to get to me. Another soul-warming mid-day meal was on the menu: chickpea curry.
For months now, I have seen my fellow food bloggers rave about kabocha squash. A few days ago, I finally got my hands on one…and was completely at a loss as to what to do with it. Ultimately, I followed my friend Allie’s lead and roasted it to make some pseudo-fries. I served it alongside a spicy SprouTofu burger. Yummage.

congrats on your big run! it’s great that you can finally get back to something that you love. rest is nice, but sometimes we just need to run (or do yoga in my case, hehe).

kabocha is heaven in food form so i’m so happy to hear you’ve tried it! what do you think of it? honestly, i was originally not impressed but then i made a mistake the next day and roasted it an extra hour. that made all the difference! let’s just say making squash is now a two-hour dreaming-of-kabocha period for me now
ahhh that pomegranate bowl looks amazing! so awesome that it was both warmish and snowing today, lucky girl!

Your kabocha is lookin’ goooood! I warmed leftover squash in the microwave and loved it soft and mushy too! Did you eat the peel? I used to eat it a lot until I found some out the other end (if you catch my drift). I also had too much one day and it made my tummy rumble

I like it the opposite way, though. I roast it on high heat so that it gets that nice crispy crust on the outside.

Glad the weather finally stopped bullying you! It’s not stopped for me. Yesterday I went out in 12, which actually wasn’t so bad! But today it’s 2… a great excuse to be lazy and take a day off!! Tomorrow is 17, which sounds like a tropical location now. So if 17 is the tropics, 30 must be a furnace!
Your Vegan Thursday menu looks stellar. Maybe because kabocha was present? And I’m not gonna lie: I want to swim in your Antioxidant Oat Bran.
