Fried Egg Pizza

Fried Egg Pizza
(Serves 4-6)
Ingredients
- 1 whole wheat Boboli pizza crust*
- non-stick cooking spray
- 1/2 medium red onion, diced
- 2 cups raw spinach
- 4 medium eggs
- 1 cup part-skim mozzarella cheese, shredded
Method
1. Pre-heat oven to 375 degrees.
2. Heat a skillet with non-stick spray and cook onion until soft and translucent. Add spinach and cook until wilted. Remove from heat.
3. Place crust on a nonstick cookie sheet. Arrange spinach-onion mixture on pizza crust. Add mozzarella. Crack an egg in each corner of the crust, being careful not to let the white drip off the crust.
4. Bake until the egg is set and the cheese is melted and golden, about 20-25 minutes. Serve and enjoy!
Notes
*I have prepared this recipe using whole wheat pita breads as well with just as much success.
