Full Weekend, Full Tummy

Despite not being able to be with my family for Easter weekend, I managed to fill up my schedule…and my stomach. Amidst other things, I finally got a chance to see Slumdog Millionaire, plus I enjoyed a perfectly lovely meal with my friends for Easter dinner. Check out the details below:

Friday

Before heading out to my very last tutoring session of the semester, I made a quick wrap with my leftover pizza- artichoke-flavored hummus. Yum.

Afterward, I slushed through the rain to get some Whole Foods goodies:

Saturday

I got out my good friend the George Foreman on Saturday. Everything tastes better grilled:)

Just before heading out the movie, I grabbed a snack. Gotta love the convenience factor of these little cottage cheese cups.

When I finally got around to having dinner (~11 PM), I was starving. I need to finish up some of my freezer goodies in the next few weeks too, so I just heated up a Chik patty and topped it with my agave-mustard sauce. Dee-lish.

The smoothie of the evening was phenomenal. I used Nutiva‘s regular hemp protein powder (not the HempShake), and it was glorious. It lent a peanutty flavor to the whole beverage. Good purchase, Caroline.

Sunday

So, I kind of cheated on my “E” oats. The only items I could think of that started with E were eggs (which I don’t eat), eggplant, & espresso (which I didn’t have on hand). Plus, how could I not take advantage of my Easter candy on Easter Sunday? I opted to make Easter-colored oats instead with purple and yellow. This meal proved to be a great start to the day:)

For lunch, I continued my efforts to empty my freezer. I finally branched out from my ketchup dependency and dipped the nuggs in BBQ sauce–fan-freakin-tastic.

My friends and I headed to dinner at the Fairview Restaurant. I was so excited to see a vegan item on their menu–with butternut squash, no less. I was tempted to lick my bowl clean, it was so good. I kept it classy though. The only vegetarian entree on the menu was a Sweet Potato Souffle, which obviously contains eggs, so I requested that the chef make me something special. I love doing that–ultimately your dish is the envy of the table! I was quite satisfied with the chef’s efforts:)

Excellent shake last night. I poured in some hot cocoa mix again for extra calcium and flavah.

Monday

After seeing so many of my fellow bloggers perfect the art of the green smoothie, I thought it only fitting that I, the smoothie-addict, should give it a try as well. I also used it as an opportunity to try out my new coconut milk. I was quite pleased with the results!cimg6753cimg6755

  7. That hummus looks ridiculously good oozing out of the wrap! Veggie plates are something I never get tired of either :)

    PESTO!! So good – Panera used to have a sandwich back in the day that was turkey, pesto, roasted tomatoes, and mozzarella..yum! Obviously that was pre-veg days!

    I love your grocery purchases.. especially the Cedar’s Garden Vegetable Hommus! (you know that’s my fav)

    I also love pesto :) That pesto artichoke pasta salad looks fabulous! What a great combo of flavors.

    The addition of the Easter peanut M&Ms definitely makes your Easter bowl of oats special!

  16. wow some cool foods! the coconut milk looks awesome have not seen that in stores here but i also haven’t been looking for it :) the fairview restaurant looks SUPERB, i love going out to eat where there are interesting choices and better if they are vegetarian/vegan! i’m not strictly vegan but love eating this way when it is prepared for me at a restaurant :) i have been on a banana-spinach smoothie kick- i always feel so good inside when i make a green smoothie. sort of like a food version of yoga or something like that, hehe.
