Goddess of Legumes: Chickpeas

If I were to choose only a few ingredients off of which to survive for the rest of my days, chickpeas would surely be included. Chickpeas, also known as garbanzo beans, impart a uniquely buttery flavor to the taste-buds, making them the perfect addition to a wide variety of dishes. What makes chickpeas so “goddess-like” is that in addition to their innate delectability, they are also incredibly nutritious. A single one-cup serving of cooked chickpeas provides 84.5% RDA for manganese (facilitates several metabolic processes as well as bone formation), 70.5% RDA for folate (particularly important in preventing birth defects), 26.3 % RDA for iron (vital for menstruating women and vegans/vegetarians), and almost half of your daily needs for fiber (something most Americans lack in their diets). With a nutritional profile like that, it’s hard to deny that chickpeas would be a healthful addition to any diet. Here’s how to incorporate it into your daily eats:

  9. LOVE your chickpea slide show. I think the favorite one you have listed I want to try is the Thai Pizza. My favorite use of them so far…..that’s tough since I LOVE chick peas, but, I think it would be Veggie Terrain’s Chick Pea Tacos – they are fantastic!

    I have to say that the best to eat them is in hummus!!! I eat hummus almost everyday of the week!

  14. I LOVE chickpeas! Seriously, I think they’re so underrated and have so many more uses beyond hummus. The goddess garbanzos wrap looks particularly yummy and I’d never thought of using them as a replacement for tuna, but now that I think about it they do smell very similar to it (just had a chickpea salad as part of lunch!)

    I love to eat them in ratatouille (sp?), veggie tagines (chickpeas + apricots=heaven) and just plain on their own in salads : )

  17. i agree with you 110%! i love the garbanzo <3 at first i was just a hummus addict but then i started eating them on their own.. i can eat them right out of the can and be happy haha!
