Goddess Potato Salad
Many years ago, as a 19-year-old college student just learning how to cook, I discovered a recipe (Dreena Burton’s Goddess Garbanzos) that called for “Goddess dressing.” Intrigued, I picked up a bottle and tried it for myself—I was immediately captivated by the savory, herby flavor of the dressing. Ever since, I’ve kept a bottle of the stuff, either prepared or homemade, in constant supply here at the Broccoli Hut. The recipe that follows is just another quick recipe that comes alive due to the rich taste of Goddess dressing.
Goddess Potato Salad
Serves 1
Ingredients
- 1/4 lb mixed potatoes, such as purple, fingerling, and Yukon Golds, cut into chunks
- 2 medium carrots, chopped
- 1 scallion, thinly sliced
- 1/4 cup basil leaves, chopped
- 3/4 cup cooked white beans
- 2 T Goddess dressing
- 2-3 cups raw spinach
Method
1. Fill a medium saucepan 3/4 full with water. Bring to a boil. Place potatoes in a steamer basket over the water, and allow potatoes to steam until fork-tender, about 6-8 minutes. Allow to cool completely.
2. Once potatoes have cooled, place all ingredients except spinach in a mixing bowl, and coat completely with dressing.
3. Place spinach on serving plate or bowl, and top with Goddess potato mixture. Serve.

I LOVE Annie’s Goddess Dressing. So good.
I still haven’t tried goddess dressing, but everyone raves about it! I guess it’s about time I toss the salad dressings that I never use and try this stuff. The blog world obsessions never fail to please me!
I also haven’t tried the goddess dressing yet! But I kind of want to make this for the fourth!

That’s great idea! You could use red potatoes, purple/blue potatoes, and white beans to make a red, white, and blue dish–perfectly patriotic:)

Yum– i’ll have to try this out! I bet a few herbs wouldn’t be such a bad mix in either

I used a little basil in the mix, but I bet a dill, parsley, or even cilantro would make great additions.
I need to try this!! I have never tried the goddess dressings either
I love Goddess dressing, and Goddess salad sounds so good! I really need to give my ED&BV cookbook more of a workout… thanks for the recipe!
