Grateful for Every Plateful

The other day while chomping away on my lunch, I noticed a stack of cards sitting on the kitchen table. Upon further inspection, it became apparent that they were mealtime prayers. While these sayings are intended for the three-year-olds in my mom’s Sunday school class, I still found them refreshingly relevant. Here is my favorite of the bunch:

Perhaps the above prayer resonated so much with me because it made me realize how often I forget to be grateful for the food I eat on a daily basis. It is all too common for me to become so immersed in my food blogger activities—cooking the food, attempting to present it in an eye-catching way, taking far too many photographs—that I fail to be thankful for the many blessings in my life, of both the edible and non-edible varieties.

So I am now making a concerted effort to be “grateful for every plateful.” Care to join me?

Aside from perusing kiddie Sunday school materials, I did manage to eat (and be thankful for) a few tasty meals.

I shall never tire of the blueberry-banana combo—especially if it involves gloriously fresh bloobs.

My mom and I made our way to Target this afternoon for some bananas and yogurt…and returned with a running skirt for me, PJs for her, and Steel Magnolias on DVD for both of us:) Afterward, I re-fueled with a Goddess bean salad.

I spent much of the evening chatting with Mumsy, and dinnertime snuck up on me as a result. As per usual I turned to my beloved scrambled tofu for a quick meal. Told ya scrambled tofu wasn’t going anywhere despite my return to ovo land. I also tried out a new kind of Greek yogurt. I like that it is free of gelatin and other weird ingredients, unlike the Yoplait version.

Now I am going to attempt to unpack, although there’s an issue of Clean Eating that has been calling my name all week…Ciao for now!

  1. Oh, i have tofu and mushrooms! What a perfect way to use up both!

  2. I’d love to join!

  3. That’s a really good point; I need to start being thankful for my food too. Its makes me feel guilty sometimes, that I have the means and money to worry about such things as being picky and hitting the right macros, while there are people out there who would give their right arm for a simple bowl of plain ol’ white rice. Hm…

  4. Thank you Caroline for this great reminder to just be grateful to be able to put together a meal. I find myself overanalyzing everything I am going to eat. I get anxious when I can’t eat when I want. What I need to do is be thankful for the fact that I know I will eat in the future. I am so lucky to be able to eat great meals and have lots of options every single day of my life.
    Thanks!

  5. Breakfast for dinner! Woo hoo!!! ;)

  6. I think Dannon’s Greek yogurt is actually my favorite kind, even moreso than Fage. It’s the only brand I can actually eat plain if I feel so inclined. :P And I know what you mean about Yoplait’s version…:/ And it just really isn’t that good. When I tried it it wasn’t thick like Greek-style is supposed to be, and it just tasted like regular yogurt.

The Sunday school saying was very cute. :] Thanks for sharing.

  7. That is so true. We are soo lucky to have so much food – and good, healthy food at that.
I love how balanced all your meals always are! You’re a nutritionist’s dream haha

  8. That tofu looks like real eggs

Yes, we should all reflect upon how fortunate we are for the food we have available to us each and every day.

  10. Great post. I definitely think a downside of blogging can be forgetting to simply savor meals, just as they are. Love the gratitude initiative. Though I have to confess, Caroline, that you’re plates of food ARE always so beautiful — would that all of my meals were so photo-worthy!!

  11. theres nothing like a quick tofu scramble mess :)

  12. I have been doing this more and more lately- ever since I started mindfulness and focusing on what is going on, I have been increasingly thankful for thwta I have.

  13. Yay for a non gelatin cheap-er greek yogurt!

  14. Be warned: Steel Magnolias is a tearjerker!

  15. i vote clean eating THEN unpacking haha and then come back here and share what clean eating taught you ;)

love those cards! your mom is a legit teacher haha

  16. Oh my…thank you so much for that wonderful reminder. You’re so right. It’s too easy to forget to just be thankful for all the food that we have, and sometimes I need to remember that.

So yes, definitely joining you in making an effort to be thankful. :D

p.s. the tofu scramble looks awesome! :D
