Guess Who's Back
I apologize for the excessive amount of Eminem references this week…but this song just popped in my head as I sat down to compose this post. My middle school taste in music is coming back to haunt me apparently. Anyway, I am back in Dixie, as of about 9PM this evening. I have a crap-ton of unpacking to do tomorrow, but for tonight, I am perfectly content sitting on my own bed, munching GoLean– and blogging, of course.
So here’s the run-down of my road trip eats:
Monday
With no blender around, I was smoothie-bereft last night. Although I seriously considered digging around for my Magic Bullet, I then realized that I didn’t have any ingredients with which to concoct a smoothie. Instead, I came up with this:

I hate to poop on everyone’s coconut water party, but I am not a fan. I couldn’t take more than a few sips of this stuff. Perhaps I should sample another brand before giving up on coconut water completely. Anyway, the other component of the evening snack was delicious! I mooched this from a campus eatery when I had to evaluate it a few weeks ago for the dining committee. Very cookie-like and completely healthful. I also have the date variety in my bar stash, so I am looking forward to trying that as well. What’s creepy is that I was munching on these just as I was reading this post. Food blogger ESP.

Tuesday
My dad had an appointment this morning, so my mom and I had some time to kill at the hotel. I opted to pass the time with a workout and a divine (FREE) continental breakfast. The selection of dried fruit and nuts at this place was cuh-razy. I found myself torn between the currants and the apricots for oatmeal toppers…clearly the currants won in the end. This breakfast looks like something straight out of a nutrition textbook–is that a good or a bad thing?

We made a stop for some outlet shopping in the afternoon; I scored some preppy gear at Polo Ralph Lauren–skinny fit polos were on sale for $29.99! Before hitting the road again, I stopped at California Pizza Kitchen in the food court for some quick eats. It was technically a “CPK ASAP,” meaning it had a limited menu, so I ordered the already vegetarian soup and the Chinese Chicken Salad without chicken. The dressing was phenom–I hope it didn’t have too many chemicals in it.

For dinner, I hit up Moe’s while my parents headed next door to Lenny’s. Obviously, I think my meal was far superior to a lame sub sandwich. When will sandwich places get the memo that bread with vegetables does not constitute a worthwhile vegetarian option? All sub shop grumbles aside, my Southwest fiesta meal was delectable–Moe’s knows how to feed vegetarians right.

Honey, you make being vegetarian look like it’s THE LIFE. Like, if all vegetarians ate like you, then no one would wanna eat meat anymore! seriously…i love all your food picks. Yes your breakfast does look like it’s straight from a nutrition text book, and i’m most definitely glad the currants won over the apricots in the end!! hahahah I’m not a huge fan of apricots and i can’t imagine them in oats…though i bet they’d look gorgeous! hahaha
I loooove the asian salad dressing that restaurants have. I neve rintend on piiling it on, but i always do because it’s so irresistable! I never have that problem with creamy dressings. *sigh*
That is a pretty awesome continental breakfast. I’ve never had any quite that nice.
And the salad at the end looks great! I’d take that over a sub anyday.

I thought you were making a joke (go figure) about Denny’s when you said your parent’s ate a Lenny’s but then I saw that it was actually Lenny’s! Well played.

Moe’s has tofu in their mexican-style salad?…..ohh my gosh, I need to go there!! You are such a good traveler, with buying your little packaged almonds and hitting up the continental breakfast, DONE RIGHT!

that’s a great breakfast combo in a hotel… that must be a good hotel then, because most of cheap hotels only serves croissant and coffee

I totally am with you on sub shops needing a better vegetarian option! I had subway the other day and my bread and lettuce just didn’t do it for me. They should offer like tempeh or tofu subs. Or portobello mushroom subs!
try one natural experience coconut water…the stuff you tried is one of the worst brands – it’s them, not the coconut water. I drink it every morning and it’s made my skin clearer, my hair grow better, and given me the energy and hydration i need during my morning runs.
I’ve had that CPK soup before and I have to admit, it’s pretty good

I agree about the coconut water. I just don’t get it. It taste a bit like almost sour milk to me.
