Heifer Zuke!
Remember when I planted my garden earlier this summer? Well, it has finally started to yield some veggies, or, as the case may be, one heifer veggie. Check out the zucchini I harvested this afternoon:

Crikey! I always assumed that produce as large as this was hopped up on ‘roids of some sort, but this green mammoth came from my own garden, so I know it was grown the old-fashioned way. This big beauty should last me for awhile…well, for at least two meals instead of one:)
I had a tedious day of class and lab, so I rewarded myself with some tasty eats:

If you haven’t get tried it, the chocolate-strawberry-PB combo is pretty killer–I highly recommend it.

Monday
I had ZERO time for breakfast this morning, so I assembled a Hugh Jass cereal bowl.

After lab, and my beloved NYT reading session, I put together a late lunch. I used my Peanut Sesame Hummus recipe to make a phenomenal wrap. Although I love almost any colorful dish, this one tasted particularly divine. Like I always say, “Taste the rainbow.” Skittles don’t count.

A few months back, I made a zesty white bean and lemon pasta dish with asparagus. I re-created that dish tonight, this time using some of my crazy fresh zucchini since asparagus is out of season these days (most of the ones you see in the store now is grown in Peru). I used lemon juice in the sauce and continued the theme with a few sprigs of lemon basil from my garden.

That Zukes nothing! We’ve got a picture of Gracie next to one when she is like 5 months old and its bigger than her! I’m going to try to remember to post it.

That is one monster of a zuch! We hope to put a garden together next year and I am def planning on putting in both zuch & squash! I bet it was fabulous with the pinenuts. Hope you have a good rest of the week!!

We got our first zucchini of the season, and they really are that huge. Later in the summer, they get even bigger, so maybe it will last for three meals
