Herbs Aplenty

Several weeks ago, I posted a list of plans for this summer. Here it is not even a week since the semester officially ended, and I’ve already got several of the projects underway. Case in point: the herb garden.

My whole life I’ve had the good fortune of having a talented gardener as a father. As a result, every summer I have been able to raise fresh vegetables and herbs under his careful supervision. This summer will be my first on my own as a semi-adult, and I wanted to continue the tradition of having fresh herbs on hand for cooking. After all, fresh herbs (e.g., oregano and parsley) are valuable sources of antioxidants, and some say that cilantro may even help lower cholesterol. Plus, considering how much I’ve been spending on fresh herbs from the grocery store lately, this herb garden will likely save me some money.

So there ya have it. Tasty, healthful, and money-saving.

Aside from flouncing through the Home Depot Garden Center, I managed to assemble few tasty meals too.

Saturday

After my morning workout yesterday, I took Margot for a trip to the farmers’ market, which was followed by a long walk and a cup of coffee at Starbucks. By the time I got home, I just wanted food—and I wanted it fast.

For lunch, I slapped together whatever looked tasty in the fridge.

Seth and I were headed to an evening showing of Bridesmaids, so I made another quick egg white scramble beforehand.

Sunday

I’ve been having major choco-nana cravings lately, so I decided to put the combination into parfait form this morning.

Amidst a frenzied recipe writing session (see this afternoon’s recipes—more to come!), I made a quick BLT sandwich using my beloved tempeh bacon.

I channeled the breakfast-for-dinner beast again this evening with some cheesy herbed savory oats.

  3. Isn’t breakfast for dinner just the best? :) I sure think it is. Sometimes smoothies and english muffins sound best for dinner :)

  5. Aww your puppy is SOOO cute I just want to eat her up! I’ve never had luck with cilantro, it always turns yellow and wilts on me :( But I have a booming rosemary, oregano an basil plant that I love!

  10. Margotttt! So cute :) Hooray for the fresh herbs. My favorite fresh herb is probably basil. All the eats look yummy. My favorites – the parfait and the savory oats. I haven’t had savory oats in forever ever

  11. I love cooking with herbs and can’t really imagine not having my herb garden or the stash I freeze during the winter months. Last summer I had high hopes for my sage plant, but I only used it a couple times. I was surprised that my most used herb turned out to be thyme!

    I could not figure out to keep the dill and cilantro from bolting, so if you have sucess growing them please fill me in on the details!
